I’m Thai and I love your channel the Sub is pretty accurate but actually the chef that got slap is the winner of Iron chef tv show He is actually really amazing chef IRL.

About the subtitles for that "Hick-chick" part you mentioned, they actually did such a nice work using the word that convey the meaning and the feel of what he said pretty accurately. It is quite difficult to fully translate that sentence for the foreign audiences to understand without making it too long, so, I think they made a nice choice using that word. It might be a bit more rude than what was said in Thai, but I think the subtitles are accurate enough and clever. A little fun fact, the chef that got smack was a real chef, his name is Chef Attasit “Big” Pattanasatienkul. He is quite a famous chef in Thailand.

That's actually awesome. I bet it was amazing for him to cook the shitty version of the fried rice as sort of a commentary on how western-trained chefs would likely screw up this dish by overcomplicating it while also getting all of the fundamentals wrong.

I made egg fried rice with bacon the other night for dinner. I have a small wok and a home BTU size gas stove. I did it in batches. First the bacon, then the veg, finally the egg with the cooled rice. At the very end, tossed everything together, and it looked pretty much like the woman's fried rice. I only have so much heat. So don't crowd the pan.

I worked in a French restaurant for a chef back in the 80s who was just like this. Tough, but after service he was really appreciative of everyone, and we all laughed, talked about what we did, what we could do better, and how the next service would go. But during service...stand back. He was tougher than a sailboat racing captain during a flubbed spinnaker douse.

One of the reasons I love Red-Foot Zeff from One Piece, who is a head chef of a 5-star restaurant at sea who is literally a retired pirate captain... who was a chef even back then and killed people with kicks exclusively to avoid dirtying his hands. The whole point being there is not much difference between a ruthless pirate captain and a good head chef- either way, you need to command authority and respect to a point of being feared in order to keep things running smoothly.

I have only smacked one cook in my career as a Chef. He spit on a steak, after he cooked it more, that came back because it wasn't cooked to the customers liking and was going to send it back out to the customer. To this day I have a real problem with anyone who attacks food returned because it isn't to the customers liking.

One thing my mom learned from Fu Pei Mei was that food had to have contrasting colors. She would say that the girl's fried rice should have peas and carrots so it wouldn't look so bland, even if it didn't taste bland.

There's something about Asian filmmaking/directing that just has the ability to make anything and everything tense as hell. It's gotten to the point where I notice how a lot of western fight scenes absolutely suck compared to ones in Asian cinema.

I loved this movie so much. I sent a share to my father who is a trained chef in Chinese and Japanese style food. He called me LAUGHING so hard when he kicks the bully out of the kitchen 🤣

I loved the comment about subtitles haha. The actual sentence in Thai wasn't bad in this case but I think there are a lot of Thai curse words that are just impossible to be translated without losing the true emotion of those words. For example, we change our 1st and 2nd pronouns when we get really mad. There are only I and you in English that is why English is so flavourless haha. Thais are really creative about curse words. There are tons of them and the number is growing as we create new words and slang every day. The usage of them is also diverse. It really depends on the context. Sometimes we modify them a bit to make them softer or even "cuter." On the flip side, Thai subs and dubs for most Hollywood movies are also PG. The F word is usually translated into something less aggressive. Interesting facts, while the language in Hollywood movies getting more PG these days, the language in Thai movies getting less PG. I am not saying that we don't know about political correctness or anything. Thai language in older movies is too formal and is not how Thai people actually speak in real life. Modern Thai movies are just being more honest.

If I were to ever use butter in fried rice, it would be at the end with all the seasonings. It won't be there long enough to burn, but long enough to add its flavor. The way the cook did it in the film, he had to keep his temperature lower than you'd ever want to cook fried rice, which contributed to the excess of moisture.

Yeah, you can definitely use butter in fried rice. Just not as the replacement for oil, you want to use it as an addition.

My Hong Kong boss from many moons ago offered chicken fried rice at his restaurant, but here's the thing - he cut his partially-frozen chicken into slivers for prep, stir-fried a spoon of that first, had an assistant chop it into pea-sized pieces while he worked the wok hay, re-introduced it before hitting the dish with the soy and sesame oil. Tasted good, you saw the chicken, you got a consistent bite every time.

I make stir fry at least once a month, but since I don't have your standard issue fighter jet afterburner strength wok stove, I use my trusty cast iron skillet (and yes, my grandma did give it to me), max heat, and I stir fry in batches. So I do my leeks, onions, red peppers, carrot, mushrooms in 5 separate batches. Then I fry the meat (usually pork tenderloin I marinated over night), also in batches. As the last batch is done, I add the sauce, thickens, and then add everything back in and combine. I haven't rven attempted fried rice. Only relatively recently have I managed to cook rice decently enough (I really should just get damn rice cooker).

I'm Thai, and I'd say... that subtitle is fking accurate LMAO! . but I'd say that what he said about her fried rice is kinda more simple than the subtitle does..... "หน้าตาบ้านๆ" which actually means "so simple looking". หน้าตา = the look of smth + บ้าน = house / simple + when we repeat some word it means double of that word, for example : สวย = beautiful + มาก = very, so "สวยมากๆ" = "very very beautiful" etc. ps. some of our word might sounds so normal to foreigners but for us sometimes it's not, including this บ้านๆ word. >:D

Better way to dry fresh rice in restaurant do they have a blast chiller? If so use it spread it across a tray and use that. But don't freeze it.

They were joking about it... but I actually think that Frenchie was correct about the slap. Since the guy did not work at the restaurant AND because he had been told to leave, but he did not leave, legally the owner of a property is then entitled to use 'appropriate force' to remove the trespasser. So he would probably get away with the slap even if the guy took it to court.

I worked in a sushi restaurant for 18 years. One time I went to the owner 2nd restaurant because her head sushi chef quit. There was a white kid in his 30 as a sushi helper. I had so many problems and headaches with him. Coming to work late every day and acting like a smart ass. Everything you do in sushi is clean and all cut should be the same. One time when he was plating the sushi roll I questioned why all your cuts is in different sizes and he said he don’t know. Like how do you not know if you are the one cutting it. 2nd thing is when you make a sushi you clean as you go but he just wipe everything to the floor. I told him to not do that and the said this I my station and don’t worry about it and that I can do whatever i want. Like I am your head chef so you have to listen to me. I had so many headaches with him

I do that too! I like to get Mongolian beef or orange chx and fried rice and I cut the protein even tinier and spread it through the rice 😂 It's soo good

I know this is unorthodox but I've taken to adding pickled peppers or pickled raddish to my fried rice at the end, same time as green onion, but I don't evenly spread it. There's something nice about getting that pocket of sour every 3 or 4 bites.

If you want to cook fried rice with fresh rice out of the pot there is only one way to do that. After whisking the egg add just enough of the egg to the rice to cover all of the grains with a film that the egg causes the grains to stick together. It sounds weird but mix it very thoroughly so each grain is separated from the others by egg. It isn't anywhere as good as doing day old but it keeps the grains separated and causes a good amount of the moisture to evaporate out of the rice during the cooking process. The average person that doesn't eat fried rice regularly won't be able to tell the difference. Eat fried rice regularly and it is pretty obvious something is off with the texture of the grains.
