I miss daddy, Jack, I was lucky enough to get a couple bottles of his blackening seasoning back in the day. Good basic stuff just like he did good basic cooking.

Speaking truth jack. As a kitchen manager, what you said about looking at a cook wrong, and them walking out couldn’t be more true. And then there’s always the new hires second day, you noticed there about three minutes late, then it turns into 15, then you text them and either get the response that something just happened in their life that they can’t make it and don’t know about the job, don’t answer at all, or tell you that it just wasn’t for them. Quitting in texts are frequent also. Keeping employees off their phones is also an unbelievable task. Brought my son in at 14 to be a busboy. Told him if I ever catch you pulling your phone out to text, look at the Internet or anything on your shift, you’re gonna have to deal with some major consequences. He never has, even once., and now he is the head bus boy. Keep up the awesome videos! Thank you brother.

The killer for us here in Ct. is the minimum wage, it's going up a dollar a year. We're at $13 an hour for a dishwasher, in 2 years it will be $15. How much will line cooks want? Putting small business out! It's not our fault so many people have no skills and motivation to learn, kids have had it too easy, they got soft Flav! Jack
