During the 20yrs when i worked at the sydney fish markets i filleted tons of tuna using blades that could easily cut through tuna, but i ain't never seen a blade cut a top layer of skin like he done did, this knife is truly on 👍another level. Beautifully made by the blacksmith.👍🌴🇫🇯😎

I'm English, and I'm old school, so love traditions, and I am enjoying everything from the semi traditional blade making to the very traditional looking cutting and separating of that beautiful Tuna. It Would help if you had English subtitles/captions, because many of us are interested in what's being said, rather than just watching the action. Begin adding them in the future, you'd grab a much larger audience and a bigger subscription for your channel.

These big knives have changed the game in tuna filleting as it is heavy enough to cut through bone yet it’s also precise for precision cutting. Nice work❤️

@@Civerius He does, a heavy knife carries momentum, makes is easier to cut through the tough outer skin on a tuna. They're SO hard, like, almost armored in places. Kind of crazy to think about.

대만에 여러번 가고 대만 전통기술자들이 만든 칼도 6개나 사왔는데 참치 해체하는 것은 처음봤네요 대만은 해산물이 많고 가격이 싼것도 많아서 가장 많이 먹는 새우나 거대 민물고기 요리는 먹어봤는데 참치회를 왜 몰랐을까? 대만 기술자들이 만든 주방용 칼 정말 잘만들어요 아직 전통방식도 여전히 지키고 있고 칼도 자기 이름 낙관 찍어서 잘팔고 있죠

看了半天才明白,原來軟剛夾硬剛的三枚結構只有用在刃口的部分 所以才需要那道刀身跟刀刃焊接的步驟.....以前一直以為整把刀都是三枚結構~~

Wonderful. A true master at his trade. I would LOVE some kitchen knives made by this chap. I bet the would outlive and outperform the best mass produced stuff. The way the Tuna master wields the 3Kg blade like a surgeon does a scalpel at a few grams. I'm British and have been fortunate enough to travel most of the world for myself and work. My favourite place is Asia. Hong Kong, Taiwan and Japan are truly fascinating, intriguing and joyous places for these Gaijins eyes and soul.

So he should , I would not expect less , when you do the same thing and the only one thing over and over , you have to get some sort of skill and a high level of expertise , that anyone in the same situation would do the same I just fail to see the legendary fable into it , just doing his 20 or 30 + years job as expected

Cladding steel with soft iron is very common in Asian knifemaking.

And I watch a lot of blacksmith and knife making videos"_ Not very good ones, then. “ 'San Mai' is a Japanese term meaning 'three layers'. It refers to lamination, a technique in which multiple layers consisting of different types of material are fused with each other. In this case, three steel sheets are welded together, as opposed to the entire blade being composed of one kind of steel. Hundreds of years ago, Japanese bladesmiths employed this technique to forge their katana, or samurai swords. They used a hard steel in the centers of their swords and a softer steel on the outer edges. This combination of steels made the blades both supple and incredibly sharp." It's been in use since about 1300 AD.
