I just wanted to say that I am a new gardener and I am 17 years old. My dad built 3 raised garden beds and a greenhouse this year and put me in charge of the entire vegetable garden. At first it was really difficult to learn that you can’t “control” nature and that sometimes things just don’t work out, but your videos have helped to encourage me and remind me that even if you don’t get a yield, your garden wasn’t a failure because you always gain knowledge. After changing my mindset, my garden ended up surprising me and we have gotten way more food from it then I expected! Thank you so much for being so encouraging and laid back about gardening. My Middle School Kitchen that’s awesome ! So excited for you!!!! I grew up gardening with my mom but this is the first year where I am in my own home in charge of my own garden and I have to admit it’s a different experience, I’ve learned so much more this year! I am 27 and I’m so excited that you get to have your own garden space to learn from at 17!!!!!

One thing I wish is that I had gotten into this all sooner. I love that you are wanting to and willing to learn all this at your age. THEN that fact that your dad not only supports your learning but built you a space to be in charge of, how awesome! Those lessons about control and others you learn from nature will take you far in all areas of your life.

Way to go. You learn more from failure than success most of the time. When something goes wrong you usually have a fairly good idea of why. when something works you just know it did. You have no idea how close you were to it not.

My lovely husband refuses to be reeled into the garden mess unless he’s feeling like it lol he surprised me and bought a bunch of plant starts for me this spring! I don’t mind building the beds and tending the plants and he knows that it’s an outlet for me. 🤷‍♀️💪

Gals I had a really good strategy to get him on board 😁 I told him I could cut the boards etc if he just showed me how to use his tools & that I needed his truck. Amazing how he offered to help after that. 😂😂😂😂😂

So... you know I love you, right? So... it's out of love that I must tell you that the "T" in confit is slient... con-fee. Also, I must tell you that I mispronounce words ALL the time. I was just telling my sisters that I'm looking at getting one of those "cry-cut" machines for crafting. They laughed their heads off & then told me that the Cricut machine is pronounced like the bug... "cricket." 🤷‍♀️ "Never tease someone for mispronouncing a word. It means they learned it from reading it on their own & did not learn it from being taught." ❤📚🌱🍅

Reminds me of the time 30 years ago, while out with a group of friends at a Mexican restaurant when I ordered a quease - a- dill- a. The table broke out in laughter and there I sat mortified. If only words pronounced the way they are spelled.

I’ve learned that there is never a “quick” trip out to the garden. Being distracted by all the beautiful and tasty fruits is the best distraction ever. And I’ve been known to pull weeds in my “Sunday best”.

Just saw your tats of peacock feathers. Reminded of my Nana. She had over 100 peacocks on her 80 acres. They kept the rattle snakes away. Years later she was downsizing and gave them all away. The snakes started showing up! Great memories.

Random story that you just reminded me of... we used to say my grandma was the worst best cook. She would make the TASTIEST food until gardening season came lol she would get so absorbed in harvesting and weeding and tending to her garden that dinner would often burn lol we would joke that the smoke detector was her summer kitchen timer. But now as a gardener myself I understand her now more than ever although I don’t eat dinner until the sun goes down. I don’t even try to cook while I’m in my garden. Thanks for reminding me of this today. Made me smile!

I can one up that...my Grandma was such a master gardener, her yard look like a park & the vegetable beds & fruit orchards she had were just outstanding! She was also the one that permed everyone's hair in the family (teenager in the 80's what can I say!😅💁‍♀️). When I was in Jr High my Mom sent me over to my Grandmas to get my hair done. She got it rolled, put the solution in & then said I have to go check something out in the garden I'll be right back. 3 hours later she comes racing in, "I forgot!!!" You should see my 8th grade picture! I looked like a poodle...a very, very, very fluffy poodle!!!😑🐩 I can laugh about it now, but a middle schooler it was pretty traumatizing!!!😳😫😅

Thank you for not only showing us how to plant gardens etc. and all that goes along with it, but harvesting it and showing us things you are making with it! Many never show that they do canning, and with a big garden what do they all do with it? Only eat things fresh? I hope not, as I thought having things for the winter was a part of the garden harvest. Thank you for showing us more than just the garden. We learn from this too. Also I have heard people off the internet talking about your book! A huge thank you for going to help the Hollars, and taking that time out of your busy day to do that. True friends! Bless you!

I have my fall garden planned and seedlings started. Now I'm just waiting on my summer garden to start heavily producing. Soon... very soon. 🤩🤗🌽🍅🥒🌱 You inspired me to start and up until this year I had a brown thumb. Now it is green. Thank you so much for the inspiration!

Nobody is born with a green thumb. They are EARNED by the lives of many young seedlings, scrapes, bruises, muscle aches, the death of many pests and the heartache over thinning seedlings and losing plants to the weather.

I made several batches of cherry tomatoes that exact same way and tossed with pasta as a quick meal. Love it! Every time I run out to the garden for one quick thing I find myself doing so much more for so much longer. Yesterday I went out to just water a few of my containers and then two hours later I finally came in so hot and sunburnt. Lol Thanks for sharing the joy of gardening.

That fence wire is too open,,, chickens can and will squeeze through those large openings. Run a 3' or 4' tall strip of true chicken wire fencing around bottom of your existing fencing.

French word rule (still rolling around in my brain from highschool French class): if the word ends in a consonant such as "confit"(pronounced cone-fee), the last consonant will be silent. Only pronounce the consonant if the next word in the phrase begins with a vowel. Thanks for all the vids. So much inspiration for me!

Living Traditions dehydrates some of their okra in disc and they say its turns out great. A crunchy snack food. I have had it before in larger pieces. Think small ones would be tastier

Pam says- Confit pronounced "cahn-fee". The n is mostly silent (nasally). That pan dripping would make a beautiful base liquid for a vegetable gumbo. Put them okra in the pan and back in the oven to roast. Then add seasonings like bell pepper, parsley, and garlic, and even some greens like chard, spinach, sweet potato leaf into the pan with more liquid if you need it. Leave it cook for a couple hours on low with a bay leaf or some gumbo file or both. salt and pepper. Serve over rice. You don't even need a roux. C'est bon.

I planted my silver slicer, Hill Country okra, pole beans, and yellow and green zucchini 3 days ago. I am excited. I missed the first window for the summer garden but I am catching this wave! Also, I will be starting my winter garden with you too. Sept. 1 I will have my total hip replacement And I want to have them ready to plant. I finally got my raised beds made and filled, they are 27" tall so I won't have to bend at all to tend. Bless you, for continuing to press me to plant even when it is tough!

I throw cherry tomatoes in scrambled eggs and always make fridge cubes with toms and purple onions. Anytime I roast or pan fry meat I throw them in and they are so sweet. When I make nachos, I throw cherry toms in the corners of the pan right alongside the chips then chop some fresh for the top to let my family sprinkle on to their taste. We save dehydrated cherry toms for snacking and mostly pasta dishes. I’ve never done the oil in a jar recipe but I will now. We are getting buckets of toms daily and it’s hard to keep up.

Our favorite thing thus far to ferment is Asian cabbage. Not kimchi but cabbage with garlic ginger and whatever Asian sauce you like. Our favorites are coconut aminos, fish sauce and rice vinegar. You can even add any root veggies to the mix. Then weight everything including liquid for brine. Times that weight by .025 and that is the weight in salt you need to add. Ferment for about 5 days. Omg it is magical!!! Have fun my sister

I need to try them if/when I get enough cherry tomatoes. I only have two cheery tomato plants, Super Sweet 100 and Black Cherry (new to me this year). I just picked a small handful of the Super Sweet 100's today and 1 large tomato. My first "harvest". I love watching you, Miah, your family and pets. Thank you so much for sharing!

We put chicken wire all along the bottom of our fence, staking it down so the chickens can't get out of their area. I keep mostly heavy bodied chickens like brahmas, but have a few phoenix' so we built our fence about 12 ft tall to keep them in. Now I don't know if it's the fence or what but they seem to stay put. Right now we have about 30 babies in there and a few of them we getting into my neighbors yard (their dog will kill them) so we went around and did more reinforcing at the bottom. They keep us very busy. :)

Those tomatoes look so good! I love to braise some kale with onion and garlic, then add cherry tomatoes until they burst (or add sautéed or roasted ones) then after you turn off the heat, add lots of feta cheese.

U shld try simmering down diced tomatoes, onions and bell peppers in olive oil with a lil salt & pepper until soft. Delicious added to eggs, over toasty bread, in bagels with a lil cream cheese, over pasta, with fish cooked any way, many other ways. Freezes well. Simple, delicious & versatile.

You can always add herbs at the end. It will taste brighter. If you put them in while they’re still hot is great too

When I go to my garden I have a plan of what I need to do that day but more often than not I get sidetracked here and there. It is such fun visiting the plants and seeing what they need. I was a little worried about my tomatoes, not sure if I was over watering or under watering or if it was too hot etc. but then I saw that yours had some dry crunchy looking leaves too and somehow that made me feel better :)

Huw Richards has an excellent method for planning. You’re an old pro at it but it’s really been helpful for a beginner like me to visualize what beds will be full and what will be empty in a particular month. Of course, you have to know how long a crop will be in the ground. Still figuring all that out.

Maybe it's time to think about moving the chickens. You could always take a chicken bucket into the garden to throw the clippings and fruit you want them to have. Would save a lot of fruit from being ruined. I know how you love your tomatoes!! Me too!

My garden is almost done for the summer, just have peppers left. Now have to wait a month before I plant my fall garden. Cant wait!

Yummmmmm!! I bet the oil in that pan tastes like actual heaven! (Btw, Confit is pronounced Con-Fee!) We’ve made the same situation with peeled garlic cloves, piled into a jar, then heated olive oil up and poured it over, then to live in the fridge until we need their deliciousness. So good!

My tomatoes are just coming ripe and my peppers are as well. I had the goal of growing everything I needed to make salsa for my son in law. The cilantro didn’t do well, so I’ll just buy some. I’ve already harvested the garlic and onions, so the tomatoes and peppers are all that’s left to wait on. I love watching your garden and seeing how things are growing.

This reminds me of a dish I made up with chopped cherry tomatoes, olive oil and fresh thyme/oregano/basil broiled until hot and then used as a dip for crackers. When I'm feeling extravagant, I add chopped halloumi cheese before broiling.

Thanks for the continued encouragement and wisdom! My garden hasn’t exactly gone wild this year but it’s produced. Here in the Texas Hill Country we’re dying for some of your rain. I water but I swear the plants know the difference. Praying the forecast for some tropical downpours this weekend pans out. So many times a storm looks like we’ll get it and it splits and goes around us. I’ve been known to yell at the radar app on my phone, “REALLY???!”

I used plastic Tenax fencing above my solid fence to keep my chickens in, so it was another 4 feet above (kind of like deer fencing only less expensive). Since it's loose the chickens don't try to jump up on it and it made it too high.

I did something similar to your tomato confit last year and they were so good and so simple that I'm doing them again this year and planted more tomatoes to enable me :) I use both cherry tomatoes and quartered paste type tomatoes (no peeling or deseeding) in a single layer on a large baking sheet. Throw on some chunks of onion and a bunch of garlic cloves, basil and oregano. Toss with some generous olive oil, some s&p and roast them. Then I give them a whizz in my blender, pour them into freezer bags and they are fantastic! I don't have to blend them, but I use them a lot for sauce.

Hi Jess,I've been gardening and canning for over 45 years.I truly enjoy watching your channel.I have learned a lot.Gardening like life is a constant learning process.Like you I have a passion for growing tomatoes.This year I have 74 varieties of heirloom tomatoes in my gardens.As for green beans I canned 157 quarts of blue lake bush beans from the garden.Thanks for inspiration and sharing your passion for your love of gardening.

You can confit herbs separately. Then you can make great oil blends to use in the kitchen. Great for marinades and salads 😀

We had a chicken that would climb our fence. We lived in town and our neighbors all knew "Rover." She was super friendly just liked to go for an explore.

Hi Jess, I just wanted you to know that I am planning a fall garden because of you. Many of the foods I wanted to grow didn't get planted because of my procrastination this spring, and I have discovered varieties I can plant next month and harvest in the spring here in zone 7b. Never too old to learn, I suppose, thanks to you, Charles Dowding and Baker Creek. Currently, my first no dig garden is producing my first cucumbers and my neighbor loves them! Continued blessings to you and yours.
