This cook showcases the BBQ GURU DIGI-Q and the Large Capacity Stainless Steel Charcoal Basket made by Arbor Fabricating. I am smoking a Picnic shoulder which is normally an 8 hr cook. My first cook using the guru, so this is a long video. I wanted to put some good practical information in it that others could use researching about the guru and what it's about. I intentionally left lots of detail which normally gets cut out. Also, extra footage about the large charcoal basket. I highly recommend both products.

An 8 Hour cook is about what I average on Butts and shoulders as well. I need to get me a GURU as well. I would get the Cyber Q to track the progress on a chart. That is a product that makes sense. Thanks for sharing. I watch the whole thing.

Thanks for watching the whole thing. It was long, but I wanted to include details on the guru setup which most videos skip over. I thought about the CyberQ, but since I have two nice wireless thermometer systems, and don't care about charting my cooks, decided on the DigiQ. Plus, I won't use it on all cooks. However, the CyberQ is like combining both systems together and has nice features with 4 probes, charting, and managing from your phone. Depends primarily what you need or want to do with it. Think I'll like the guru a lot on all low n slow.

Hey Phil n Janet. Another great video and that pork was awesome looking. My son just ordered me a BBQ GURU as a treat for me......think it’s his way of saying Dad I want More BBQ after coming home from his deployment. Got that from Home Depot. The have a couple to choose from. This is a great storage bin and keeps out the rain. The only thing I had to do is drill a few small holes in the bottom to let any water get out. There are some vent holes up high. Not sure if the water blew in or came from the water fountain we had sitting close by it before. Anyway, no more issues. Love it and it holds a lot of stuff. Thanks Jeff

By any chance do you all remember how much was shipping for this basket from Arbor Fab? I think something might be wonky on their website. Shipping to Texas was $65 USD for the basket and minion starter.

Great lookin cook Phil glad you got the guru runnin for ya. When I run my guru on my WSM I usually just go ahead and start with my top vent cut to half because if I don’t it will try to run away and I run at 275 so I think that’s just the nature of the beast.

I have the Fireboard temp system & plan on using the Fireboard Drive cord that will accept the Guru’s Fan drive cable. I called Guru & talked to Donna & said there will be NO warranty on their fan systems if used with any other temp system than theirs which I can understand. She said if I wanted to proceed with their fan system they recommend their “Pit Viper (Medium Fan) rather than the “Pit Bull (Large) Fan that you showed on your video. I realize this vid is 1 yr old & maybe Guru changed their thinking on recommending the Pit Viper rather than the Pit Bull for the WSM 22”. I always like to overkill but want to know which fan I should get. Thanks again for your excellent vids as your channel is my most liked. Jim

Hello Bill. You are correct. More details and useful info for experienced cooks for verification, and newbees for learning new skills. When I was researching the guru, I watched most of the vids on KZbin about it. But, most would leave out the setup and skip to mid cook. That was a part I wanted to see, so I put that detail in this video. I love all the cookers I have but keep gravitating back to the WSM, because it's so versatile, especially with the grilling brackets I added. With that one mod, it is now a 3 tier smoker, a kettle style grill with use of all kettle accessories, rotisserie ready, Santa Maria ready Dome lid to allow extra room for food stacking. And the list goes on. That is a cookin machine with a small footprint. Thanks for stopping by a d commenting. I look forward to latchin onto some of your cookin expertise in the future.

Good afternoon Phil quick question regarding your bbq guru not sure what your issue was with it but maybe you could shine some lite on my bbq guru. I’m using 22 WSM the temperature on the gauge is 150 and the guru saying 275 fluctuates to 280 or so not sure if that was your issue so I’m just going off Weber Temperature gauge.

Loved the detail Phil, thanks for sharing this. I’ve been wondering about automatic controllers, I’m a bit of a gadget head like you, but they seem a hefty investment. Real interested to see your experiences develop with this, that pork and JIF's corn breads looked amazing btw! 😀👍🔥

Hello Jason. Good to hear from you. You are correct. The guru intrigued me a year and half ago, but was down on my list of things to get along the way. I could not wait any longer and took the leap. lol Of course the cookers will cook just fine without stokers and such, but just another toy to play with. I'm retired and don't spend much money on hunting, fishing, golfing, gambling so all that fun money needs a place to go. SOooooooo....... Whamo !! hahaha Only difference between men and boys is the price of their toys. Thanks for stopping by good buddy.

Congrats to U JIF on your Tigers, Phil, those Gamecocks held it close. The first thing that I was thinking about when I saw the basket, How can I deep fry some fish or boil some seafood in that thing before using it for charcoal. I will go to their website and check that out, curious to see the weight and also the type of stainless used for that thing, maybe would like to see some larger holes on it as not to suffocate the fire on a long overnight cook with no one watching the cooker. Nice to see this Guru work for ya Phil, it is always fun opening up something like Christmas morning and trying it right away. Stay tuned for PIF making some kind of wire management system for all the cords and maybe a weatherproof outlet mounted to one of the bottom legs of the WSM so to keep it dry during the Florence rains......hmmm, I can see the PIF gears turnin now! 😎. J

Hey Jay. Yea when you see that basket you think of fryin up some seafood. Lol Hey its stainless steel. Cook on it one day then wash it real good cook with it the next day. Mind over matter. I did need to shake ash powder down about 6 hours in. Greg said he did that with his but it was about 20 hours in. I have outside receptacles and extension cords. Was too hard crawling the house installing wire not to use. Status Quo is okay with me. LOL Stay Tuned for more.

Nice video. Do you think you can run the guru around 220degrees with your current set up and if you didn’t want to use it- is there a cap that plugs the hole on your WSM?

Yes there is a plug for the adapter when not in use. I've only used it once, so still need more cooks and experience to know the range of temps. There should be an effective way to fire/charcoal arrangement so the guru can manage it if you want it to stay at 220. What you don't want to do IMO is pour lit charcoal over the entire basket of unlit coal. I'll be testing it. Thanks Louis

I can`t afford all the fancy cookers and add ons that you guys use. Thankfully I learned to cook on my Webber kettle, with help from all of you, KZbinrs. So I can get a pretty good cook on it. LOL, I do it the Old Fashion way.

Have you done anything to make your door seal better? I saw some kits on Amazon and I imagine if you made the door as air tight as possible it would make the fan and airflow work better. Also, what is the charcoal consumption like with this on the WSM 22"? How many hours can that 19 lb bag last you? Did you have to add any throughout the cook?

Hello Thomas. Installing gasket material around the door and lid is one thing I've been stubborn about doing. I just recently ordered some gasket material from Cajun Bandit and installed it. I have not done a low ans slow cook since doing this about 3 weeks ago. The large capacity basket from Arbor Fab can actually hold almost two of those bags. It will get you through any long cook brisket you will need to do. Probably about 30 hours. I will be using that basket soon along with their new minion basket sent to me to review and try out. It is a small stainless steel expanded type metal welded in a ring to set in the middle of the big basket. You fill it up with charcoal, then fill the big basket up with charcoal, then light a starter cube in the minion basket to allow the fire to gradually creep out all around (minion style). We shall see how it does. Stay Tuned for that in the next couple weeks or so. Thanks for watching.

Hey Phil! A lot going on in this Vid........most will be lost and over the average Joe's head......but not Mine! I know and I get it! Great explanation on the set up and process. I've seen that small hole expanded Metal before........but it wasn't on Troy's channel.......Hmmmmm..... I'll try to remember where. That feature of the Guru were it can be set to shut the fan down when the lid is open is worth the price of it for that option. I have to pull the plug on my little stoker. Pork turned out perfect.. I love the picnic cut......has more depth of flavor. This stoker set up is the way to go! Don't listen to these Purist guys that say You need to adjust the dampers and it will hold temp. Yes,... maybe under perfect conditions.....but why not use a tool that will take the stress and aggravation out of the cook. Especially an over night cook with dropping environmental temps and you're trying to get some sleep! :-) Smoke On!

I believe I will really like the guru. I also believe it can have a little different relationship with different setups and smokers you have to learn over time with trial & error. They put that open lid feature option on there due to obvious spiking challenges IMO. Also, there is a Ramp down feature so when the food temp gets within 30° of set temp, the controller will begin ramping the pit temp down slowly to the food temp to prevent over cooking the food and keeping it hot too. Both are options to turn on or off. Pretty cool. I like the SS basket. I'm wondering if the slow low combustion environment in the firebox makes a difference how the charcoal burns vs just usimg the cooker vents. The ash powder buildup did not fall through the small holes totally but set on top the unburned charcoal. Even with the guru, the temp began going down after 6 hours. It was a combination of two things. Ash powder sittimg on top squelching oxygen, thereby putting out the already low combustion situation with the guru. Small holes get clogged up. However, after using my coal rake thru the door to knock off the ash, it woke back up and the guru got back on track. No big deal or deal breaker. You just need to know to do that. Just gussing, I think that's the same reason larger oblong hole came to be in the revised SnS which makes good sense. I'll give the folks at Arbor my feedback.

Hey bud. You can order it from Amazon. It's not magnetic but clamps to the handle I installed. I have a pipe nipple bolred to the handle for the clamp to grab to. 8 inch 5/8 steel bolt goes thru a short nipple then thru the handle. The flexible Gooseneck clamp mounts to it. The magnetic holder goes with the BBQ guru.

Hey there Phil! As always another great video! I too run a guru and I like how you mounted the intake. I have mine the traditional way which keeps one vent from being used. What size drill bit did you use to drill the hole? Also what location did you decide on? As always Phil great job!

Hey bro, what's your first name so I can use it when I reply. You may have told me I just forgot. Sorry. Thanks for watching and I'm glad you like my setup. I saw the vids on mounting it on one of the vent holes, but I didn't want to tie up my vent due to not using the guru every time I use the wsm. So, I opted to move around and dedicate a hole for it. You can use a step bit, but they start at $45 and go up. Lowes didn't have the size I needed for another project, so I found the hole saw bits at ace hardware which will do the job. I used the 7/8 Milwaukee hole saw bit with the arbor that fits that bit (think it is 3/8 arbor). If you watch the vid before this one it will show the same install on my kettle. Bore the hole just below the charcoal grate. The guru adapter has a vent on the inside (as you already know since you have one) which prevents ash and hot coals from dropping in.

The back of the ThermoWorks Smoke is magnetic. Will it stick/magnetize to the Guru’s holder. I have the same components and was thinking of ordering 2 from BBQ Guru if the Smoke will stick to the plate that the Guru actually slides into? Will the smoke work with the Guru magnet??? Please help so I can order :)

Seems I tried that but can't remember. Just went outside and found the magnetic on the smoke will not stick to the guru bracket due to it being stainless steel. I tried this before a while back, but forgot what I found. Option to make it work is find, bend, cut a piece of thin metal as wide as the smoke on one end, and about 1 1/2 inches on the other. Bend it in the bench vise, then drill a 3/8 hole in the small end for the rod to attach to from the guru magnet. I just went outside and made one which will work. The metal I used was a thin and rigid metal cabinet drawer divider. PM me on FB at Phil Rogers and I'll sen a few pictures.

Hello Patrick. If you are talking about the large capacity charcoal basket from Arbor Fabricating, it is all one piece bottom welded onto the ring. It is a worthwhile basket, esp for long cooks like brisket, and it's stainless steel.

Hello Jonathan, just now saw your post. The holder for the thermometer came from amazon. The magnetic holder for the guru is an accessory I purchased when ordering the bbq guru. There is a metal bracket/stand which comes with the guru, but I prefer this magnetic holder.www.bbqguru.com/storenav?CategoryId=5&ProductId=78

@@JG-vl8vs The magnetic holder is from BBQ Guru and made to fit the Guru. It does not hold anything else. I ordered a second one and made a bracket that wold allow the magnetic backed smoke to attach. The clamp holding the Thermoworks Smoke thermometer is called a Flexible Gooseneck Smartphone holder or bracket. You can find it at Amazon. why do you need the SMOKE and BBQ Guru?

Hey David. You don't have to use the Smoke since the guru gives the same information. I used the Smoke for 3 reasons. 1) I already had it so I could. 2) I used it as a Co-witness especially since it was the first time using the guru to make sure it was accurate. 3) The DigiQ version of the guru does not come with a wireless receiver, so you have to be at the cooker to read the temps. The Smoke has a transmitter and receiver so you can be 300 ft away e.g. in house watching tv or even in the bed asleep, and get an alarm if the temperature goes high or low. And by the way, it did alert me while watching football that the temps were falling. The charcoal was burning down to ash powder and it resulted in loss of proper air flow. It needed my attention to shake the ash powder thru and open up the air. There is another model of Guru called the CyberQ which includes both systems sot of. I could describe it but you can read all about it at BBQ GURU as well as watch YT videos about it. Thanks- Great question.

@@progers5019 Thanks Phil. I actually have the Smoke w the Gateway, and I am bumed about not having the fan to help regulate temps. Been looking at the Fireboard and adding a Pit Viper fan. In regards to the Ash powder issue, is that because of the size of the holes on the new charcoal basket? I like the idea of that in general for long cooks which usually scare me away. Wind up doing Hot n Fast instead. But if ash build up becomes an issue, that would negate its pros potentially. Thoughts?

@@davidmiller88ify This subject needs more fleshing out. Troy had a 16 hour brisket cook with his basket. He said in his vid he got up in the middle of the night once to check on it. Not sure if he needed to shake the ash buildup through. He used vents and No Guru. (Not that it's a difficult thing to do). Greg at The Woodshed Smoke & BBQ had to do the same thing at 20 hours. His homemade basket is open on the bottom and he uses the regular grates. I'm wondering if the low combustion cooker environment during a guru cook makes a difference than when you use just vents. IMO, that could be one reason the revised sns has larger oblong holes in the bottom because of ash build up decreasing air flow or needed oxygen. The basket maker may want to look at doing the same thing. Even with all that, I like both the large capacity stainless steel charcoal basket and the BBQ GURU. Can't wait to use them again.

Guru seem to perform flawlessly, can u control temp by moving vent on guru. This brings us to basket should we recommend to Arbor either elevated grate or slightly larger holes for bottom of basket. Can you use waterpan with arbor basket. Hahaha. Comments only John can create. The guru worked great. Different things in a cooker can make slight differences in how a guru is affected. It takes a few cooks to realize what they are, and how to adjust. I think the basket would better serve with larger holes, or oblong holes. Seems ABC adjusted for the same reason. If the smaller burned charcoal completely burns up on topside, it turns to ash powder which does slowly stop air flow which begins putting out an already low combustion fire. At 6hrs in, I noticed my temps slowly going down. I already knew what it was with 20 lbs of charcoal piled up in there. I opened the door, and poked and shook the powder down into the bottom, then we were back in business. Even with a guru, it cannot handle a stopped up basket. I will send them this feedback. However, a pitmaster keeps a check on things, and if running a Wireless Thermometer with high low alarms, you will go check it which is what happened. Yes you can use the water pan.
