I thought you are not using yeast, baking soda and baking powder at all, but you still can make a perfect steam bun. That is still a traditional way to make it. I guess it is not a secret way to do. I really want to know how to make steam bun without yeast, baking powder and baking soda at all. Let me know if you have this secret way.

She did use yeast at 0:48. 100g warm water + 4g yeast.

The most traditional method does not use yeast, and of course the dough can be fermented by itself. But you also need to neutralize the acid with soda! The steamed buns made in that way have a special fragrance. That is impossible with yeast.
