I want to say a bit about the Thập Cẩm, basically it's not savory, it's still a sweet filling, the main ingredients are all the nuts and dried fruit with processed sausage (lạp xưởng). The reason the lạp xưởng is sweet cause it processed the chinese method with Mai Quế Lộ wine, if you eat the lạp xưởng on its own it will still taste sweet. In various place, they also use sugared pork fat to keep the moisture since the filling is mostly dry ingredients. Maybe it's closer to turkish nuts cake than western style meat filling pie? Anyway, interesting experiment, keep it up Chad.

Thập cẩm favor is made using Chinese sausage and Mai Quế Lộ wine. The wine is what makes the filling tastes sweet and this favor is actually a very delicate one to make. All mooncake fillings are cooked throughoutly before baking so the meat favor is revolutionary.

Their descriptions of the flavours are so mature! When I was that young, I hated mooncake (mostly had the lotus/salted egg flavour) but now I really enjoy it. They're naturals on camera!

There's also have another type called bánh trung thu dẻo/sticky moon cake which is way easier to make and quicker to eat. You just need cooked gluttonous rice flour, sugar, oil and flavoring if you want.

You should wait 3 days after the mooncake is bake. That's when the crust become soft and chewy. One day is not enough. If the filling is thập cẩm then its 4 days. I don't know what kind of flour you use but its better if you use cake flour or bột mì số 8 instead of bột mì đa dụng all purpose flour because the crust will be soften faster. Lye water is the traditional way mooncake is bake. These days you can substitute it with baking soda.

There are 2 types of people: people who love thập cẩm & people who hate it with guts 😂. In my experience, I’ve never met anyone that doesn’t hate it but won’t choose it. It is that intense 😂. But I can ensure you that thập cẩm is the favorite of many people, including me. And I love it since I was a child. I hate smooth fillings.

Behind the difficult-to-understand structure are long stories about the custom of worship and gratitude to nature and ancestors. It would be difficult to explain briefly, but each single ingredient in it represents a tribute, a cultural object of worship for the full moon days of a month in the year, to thank nature for giving them a bountiful harvest. The mooncake with its filling includes ingredients harvested in its own season, combined together to represent a year of bountiful harvest. The art comes from the way of preserving out-of-season ingredients so that they can be used to make cakes on the Mid-Autumn Festival in a time when there was no technology and preservation equipment. Traditional flavors are hard to gain much sympathy from the public's demand, because gradually the stories about the hidden meaning with deep historical value are fading over time, and then one day a child will no longer understand the meaning of the Mid-Autumn Festival. Chad your wrong I'm that one in a million that love's the mix nuts ones, but only the ones my mom makes. Is so delicious. That's one of my favorite mooncake. And she also makes the coconut ones. But unfortunately and sadly my mom stop making them for us since dad passed away 10years ago. 😢 she makes the best mooncake. Everyone wants to order it.

Hate that weird savoury moon cake, always felt cheated as a kid when my parents cut me one. Like it’s not a sweet treat, nor is it a meat pie, what is it even? I’m trying to get my kids into mooncakes as one half of their heritage is Viet (me), but alas, they hate that savoury one too. My kids would love that peanut butter one though. (Edit for typos)

I hate the Thap cam with a passion, the texture is weird, the taste is weird, sometimes it's slimy, sticky, yucky there's no harmony between anything absolutely disgusting. Even the ants won't touch it if you left it sitting there. It went into the trash can every year no matter how much you hate wasting food. My most favorite gotta be the Matcha flavor.
