Ok, my question is, how do you know when there is enough flour added? Do you let it autolyse like other wheat varieties (hard red and white)? Thanks!

No autolyse with this recipe. You just watch for it to pull away from the bowl on your primary adding of flour and then as you knead, you're going for a slightly stiffer, but springy dough that you can easily work with and roll into baguettes. It should still feel moist to the touch. Don't over-add the flour to make it too dry.
