Even with tutorials and many failures, making this is satisfying. My copper pan is very tiny so easy to flip, but also easy to overheat. That little rag used to re-oil is essential, found that out the hard way. ❤❤

Its fascinating to see the headchef prepare the dashimaki-tamago ! He is so fast and so skilled, each movement is well trained. The tamagoyaki bentos looks so tasty ! Thank you very much for sharing. P.S. last year, I did a cooking class in Tokyo and there I tried to make tamagoyaki. I found it very difficult.

Me encanta la cocina japonesa y su cuidado en los detalles, no solo de la comida sinó que también de todo el restaurante.

That is a lot of eggs they used, no pun intended. Didn’t realize Tamago could be the main dish. That’s good to know.

At 10:00 the headchef puts a little piece of wood into the boxes, with something written on it. Does anybody know what is written there ? How much dashi is used ? When the tamagoyaki was prepared ? Or ???

The technique used to roll the omelette is more typical of Osaka, not Kyoto. Additionally, other aspects of the restaurant’s presentation deviate from an authentic Kyoto style. While the food likely looks delicious, it seems reflective of Osaka cuisine.
