I have some family members who are allergic to Pork! Sad but true and food allergies are nothing to play with. Instead of Pork, I use Veal. Veal is extremely tender and because Veal comes from calves no older than six months it can be flavored from A - Z because it really has no bold flavor of its' own. Veal mixes well with other meats, also - pork, beef. Usually flavored with fennel but Veal shanks, cooked in the sauce, with pasta‼️ Thank you, Chef AB 🥰

Y'all are fantastic together! I know that's gotta be so good. This feels like one of those dishes where I like to sneak a big ol handful of spinach in there so I can say there's some greens and some health in there. What looks like too much will disappear like nothing and just wrap around the thick noodles without doing anything to interrupt the flavor. Additive rather than subtractive health or something. The pasta looks gorgeous!

This looks fantastic! I've had something similar at Pizzeria Uno called 'Rattlesnake Pasta'. If I remember correctly, it used penne, and also had chicken and some fried jalapeno coins on top. Really satisfying dish.

Did you use ground pork (unseasoned meat) or ground sausage (seasoned). I was unsure which to use. I can find mild and spicy Italian sausage or sweet.
