Tony's attempt to try and steer Jackie Jr. in the right direction was pretty good. He often tried to give the kid everything; potential future wife (Meadow), advice on staying in college, and I'm sure he was also still kicking up money to Rosalie. If Jr had only stayed in school, he would've been living pretty large with Tony at his side. However, I think the only person that could've ever steered Jackie Jr properly was Jackie Sr himself.

that's an acting and production thing. If he would eat and put the food in his mouth normally as you'd do, it'd be tougher to cover continuity in case they re-shoot it. You eat too much over the course of shooting, plus staff need to cook/set up another portion etc. Imagine eating half way through the portion and you have another takes and then editing reveals half of the steak/ice cream/sandwich was eaten in a matter of one line.
