Home-made cream cheese recipe: • No Bake Mango Cheeseca...
Full written recipe for Eggless New York style cheesecake
Prep time: 15-20 minutes
Cooking time: 1 hour
Serves: 1 kg cheese cake
Ingredients:
• Parle G Biscuit 140 gm (you can use crackers biscuit too)
• Melted butter 80 gm
• Cream cheese 300 gm
• Powdered sugar ½ cup
• Fresh cream 3/4th cup
• Condensed milk 180 ml
• Vanilla extract 1 tsp
• Thick curd 1/4th cup
• Zest of 1 lemon
• Lemon juice of half lemon
• Corn starch 1 tbsp
• Any berry compote
Method:
• Start by first crushing the biscuit, you can use, food processor, a zip lock bag or else you can use a clean and fresh cloth to crush the biscuit, add melted butter and mix well. Add melted butter with biscuit if using food processor or a zip lock bag.
• Take a 8 inch spring form mould, and just set the base tray upside down, lock the spring form mould, doing this step will help to demould the cheesecake effortlessly.
• Transfer the butter and biscuit mixture in the spring form mould & press it with a pav bhaji masher or any flat bottom utensil, you can use a glass as well, to even the surface, press nicely to make the base of the cheese cake. Bake the base in a preheated oven at 165 ℃ for 10-12 minutes. After baking remove and allow to cool down, by the time you can make the cheese cake mixture.
• For making the cheese cake mixture, add the cream cheese and powdered sugar in a mixing bowl, make sure to sift the powdered sugar to avoid any grains, use a electric beater or hand whisk to beat the mixture, cream the cream cheese until the mixture is creamy in texture.
• Further add fresh cream, condensed milk, vanilla extract, thick curd, lemon zest, lemon juice & corn starch, sift the cornstarch before adding, use a spatula to fold and mix well, make sure not to over mix the mixture.
• Pour the mixture over the baked base and tap to remove any air pockets.
• For baking cheesecake, we need to use water bath baking method also known as bain-marie, for that, use a foil paper and butter paper and wrap around the cake mould nicely. Further fill water in the baking tray and place the foil wrapped cheesecake in it.
• Now, bake the cheesecake in a preheated oven at 165 ℃ for 45-50 minutes.
• After baking the texture of the cheese cake will be a little wobbly, run a clean knife around the sides of the cake and cool down. Remove the butter paper & foil wrap.
• Once cooled down, refrigerate in the fridge for 5-6 hours.
• After chilling in the fridge, carefully open the lock of the spring form mould to demould, take a thin & wide spatula and remove the cake carefully.
• Your eggless New York cheese cake is ready, slice & serve as it is or just add berry compote of your choice to elevate its elegance.

For the people who might need a quick guide : Crust: biscuit crumbs 140 g + melted butter → crush in grinder and pour a thin layer of it at the bottom of the mould and spread it evenly. Then bake for 10-12 mins at 165°C in preheated oven Batter: 1. Cream cheese 300 g 2. Powdered sugar(1/2 cup) ( double if egg is used) 3. Fresh cream (3/4 cup) 4. Condensed milk(180 mL) ( to be skipped in case egg is used) 5. Vanilla essence (1 tsp) 6. Curd(2 tbsp) 7. Lemon zest and 1/2 lemon juice ( if egg is used..4 eggs must be added but with proper blending after adding each egg) Now, Beat the mixture into a consistent smooth batter . 8. Add Cornstarch (1 tbsp) Mix properly again( ⚠ do not overmix! ) Next thing, Pour the batter on top of the pre baked crust and cover the walls of the mould from the outside with butter paper and aluminum foil. Now place the mould on a tray containing water and put the whole arrangement in a preheated oven at 165°C for 45-50 mins. Voíla! Your delicious cheesecake is almost ready! Now take out the mould n pinch the cake with knife near the walls for easy demould. Let it sit for like an hour until the wobbly texture settles down. Add some topping and seasoning of your choice. There you have it! Your own home-made cheesecake, NY style! ❤ Hope it helped! Leave a like if it did. 😀

@@Bigbentwoten My mum's favorite sweet is cheesecake that's why i was watching this video. The plain one is not too sweet (issliye ispe kuch log berries and fruit syrup daalte hai) usually a little tangy (which comes from the cream cheese i suppose). Cheese-"cake" is nothing like cake or bread, it's texture is more like a very dense cream on top of a hard biscuit base. I don't like it that much, but those who love kalakand would mostly likely enjoy this too.

Hii... I am a baker and was heading to learn cheesecake but i saw ur video but thought it won't be successful. Hey! Can you tell me sir's one cup is equal to how many ml ? Also the setting for the otg? Lower rod on plus upper rod on or just lower rod on?

@@harshitarathi6435 i have one of those measuring cups which have both ml and cup markings. Roughly, 1/4th cup shows a tiny bit more than the 60ml mark, so that's the conversion! :) I turned on both upper and lower rods for my otg, but kept the cheescake and the water bath on the lowest shelf cuz the upper element gets much hotter than the bottom. For temp, I followed 165 as per the recipe :)

Trust me when I'm saying this.......This is the BEST cheesecake recipe ever!!!!!! I've tried several cheesecake recipes but this turned out to be the bestttttt🤤 Moreover, I didn't use the oven. I made it in a gas oven. I preheated the Kadai with some water and a stand in high flame for 10mins then baked the cheesecake in low flame for 45mins. Trust me, it turned out super creamy and perfectly baked. 🤌🥺🙏💫

I made this few days back and its one of the best cheesecakes I’ve had anywhere in my city. Also, I don’t comment a lot so I really want to say that I’m very proud of how much you have matured as a chef over the years. I found you very randomly on Facebook more than 8 years or so ago I think it was 2015 & at that time I understood nothing about cooking but was quite an enthusiast. From there I’ve watched you grow and mature so much standing out from the crowd of instagram cooks who have such little understanding of what they’re making. I also watch Ranveer a lot who explains so well & then a few years ago you started talking in your videos and it felt so good because it showed the depth of technical understanding you have which 99% of the social media chefs don’t. I’ve learnt most of my cooking just watching you and ranveer and some time ago I found out you’ve also worked under him which really was evocative to know. All the best dude and keep it up.

All your recipes are amazing. Is it possible to give the ingredients required measurements in cups ,tsp and tbsp. Difficult to make in gm as there is no measuring scale. Thank you.

I made this last year on valentine's day and it was a bomb 💥 we live in Germany where we get authentic cheesecakes in every lane, but that cheesecake is mine and my husband's most fav till date ❤ I will make it this year also and make it a tradition for both of us!

i made it twice and now again today.. big cheesecake fan as it is so costly outside its best to make it your own.. the best simplest recipie among all.. thanks sir🙌 and i must say i've made almost 50% of dishes from your channel..and all was hit.. but this baking always gives me a chef's feel.. thanks again😊

Love watching ur videos! You detail out the recipe so well & make it with so much passion. I have just made cream cheese at home for the first time ever & ur recipe for the cream cheese was easy to make & the cream cheese turned out so smooth & just perfect. Now I want to make this cheesecake… just one doubt, the powdered sugar you are using in this recipe: is it icing sugar or sugar granules which are powdered at home ?

Thank you very much for your great tips Sanjyot. It never occurred to me that a masher could also be used to flatten the base. Definitely gonna try this. One doubt...whenever I use digestive biscuits for the base, It turns out very hard to cut through, both for the baked n no bake cheesecakes. Can I use Marie biscuits. Please suggest.
