You can also take some macaroni, put in a dash of wholegrain mustard and ham, this is basically a ham and cheese sandwich with macaroni instead of bread. Also known as the ham sandamoni and cheesewich or hamaroni and chustard. This pairs nicely with bragging about how much you drank last night.

I was putting off making this recipe for gods know why- then I decided today with a craving for Mac and cheese I was going to skip the box stuff. I didn’t have Dijon or garlic powder but I loaded it up with Chili powder and I was surprised at how easy it was to make. I just sat there stirring and stirring and eventually it was done. For me I just throw in half a box of macaroni noodles, half a gallon of milk, 2 to 4 cups of water, half to 3/4 block of Velveeta cheese, and for my preferred cheeses 6 cups of colby jack, 6 cups of sharp cheddar, and 6 cups of mild cheddar cheeses all into a slow cooker and set that thing on high for 3 hours while you wait for 30 to 45 minutes before you begin to stir the mixture once every 30 minutes. Then once it's all mixes together and everything is cooked, soft, melted, and blended together, dig some our with a ladle, put in on a plate, and then eat it away with a spoon. You're more than welcome to use whatever cheeses you want and if you want to add anything else, you're free to do so. I recommend bacon and/or ground beef.

I just wanted to suggest blooming spices in the butter first! It really amps up the aromatics and adds much more flavor rather than when you incorporate spices into the roux+milk mix

Be sure that A) you use FRESH GRATED cheese, because the bagged stuff has a whole mess of chemicals on it to keep it fresh despite its bigger surface area, which interferes with its dissolution into the sauce, and B) that the cheese has acheived room temperature before adding to sauce. If it's too cold, it turns nasty and gritty while cooking. Feel free to leave your cheese out all day while you're at work; cheese being already rotten so it's good to go as long as it's not actively growing fur or dried out. You can also bake it at 350° for 15-20 minutes for a firmer chew. Don't be afraid to add other stuff, like bacon bitz.

When i make this i like to start with a can of tuna. No idea how there in the states tuna is usually conserved. But here is canned in olive oil, so i fry the tuna a bit in it's own oil to get some nice browning. then i use that same oil as the fat for the rue. It makes a great tuna and cheese sauce.

I was following a recipe for creamed spinach & cream cheese was called for. It was sooo good. Few days later, making mac & cheese, decided to add some cream cheese to the cheap boxed cheese sauce. That raised the 'mouth feel' about 90% out of the ball park.
