Besides being plant-based and gluten-free, these cookies are also soy-free and have no refined sugar...yummy!
Trilogy Chocolate Chip Cookies
Ingredients:
4 cups almond flour
1/2 cup maple syrup
2 tbsp coconut oil, melted
2 tsp vanilla extract
pinch salt
2/3 cup chocolate chips
Serves: 12
Time: 25 minutes
Directions:
1. Preheat oven to 350 °F degrees and line one baking tray with parchment paper.
2. Place all ingredients except chocolate chips into a large bowl and mix well. Mixture should resemble a dough like consistency. Add more flour/coconut oil to adjust consistency if needed. Once this is evenly mixed, add the chocolate chips.
3. Using a medium-sized ice cream scoop, or your hands, shape the dough into small balls - slightly larger than a golf ball. Place them on the baking tray 1 inch apart.
4. Bake for 10-12 minutes or until golden brown around the edges. They will appear very soft in the middle, but they will harden once cooled.
5. Allow cookies to cool on the baking sheet for at least 10 minutes before eating or transferring to an airtight container. These can be stored for 3-5 days.
TIPS
For different varieties, remove the chocolate chips and add other things. Peanut butter works well, or try adding some Nutella! Get creative, this is a great ‘base’ and you can experiment with all sorts of flavors!
