0:00 Slicked and Spicy Lamb Noodles
0:36 Prep ingredients
0:40 Slice shallots
1:11 Chop mint
1:35 Crush cumin seeds in mortar and pestle
2:10 Make sauce
2:34 Heat oil over medium-high heat
2:39 Add shallots and salt and cook 6-9 minutes
3:32 Add tomato paste and cook until it darkens, about 3 minutes
4:10 Add paprika, crushed red pepper flakes, and cumin and cook until fragrant
4:34 Add lamb and salt, break lamb into small pieces, and cook for 5 minutes
5:10 Cook pasta until al dente
5:33 Keep lamb warm over low heat
5:38 Reserve some pasta water
5:42 Drain pasta and return to pot
5:46 Warm lamb over medium heat
5:49 Add some pasta water to lamb and stir to emulsify
6:07 Add more water as necessary
6:24 Add half of sauce and mint to pasta
6:37 Toss and cook over medium-low heat for 2 minutes
6:56 Plate and top with more lamb mixture and mint
7:19 Taste!

I made this using all the substitutions she's listed (yellow onion and garlic, ground beef instead of lamb and linguine noodles) and it was amazing I can only imagine what having the dish as posted in the video would come out

I watched this, and re-watched it, and then re-watched it again. This is all I can do until my intermittent fasting is over and then I can give it a shot and transport back to my Xi'an days. Looks very promising!

A note on the name of the restaurant: the 'Xi’an' in Xi’an Famous Foods is not pronounced 'Schaan' but is pronounced as two separate syllables (thus the apostrophe): See Ann Famous Foods, or perhaps more like 'She Ann Famous Foods'. The flavor combination in this dish is quite common in north-western Chinese cuisine, though mint is not that common. Coriander/Cilantro is more often seen.

Looks great but a shallot in place of 4-5 cloves of garlic?? I don't think so! For this dish I would probably even opt for a little bit of raw garlic at the end

Made this the other night and it was delicious. However, I couldn't easily grind the Cumin seeds in a mortar and pestle, so I resorted to using a pepper mill. While it tasted great, I think next time I might add some chopped tomatoes as a garnish to brighten it up.

If you can’t handle heat due to sensitive stomach like me, but still want lots of flavour what could I use instead of chilli? I used to love spicy foods 🌶️ but since my gastric bypass surgery back in 2015, the most I can have is black pepper, garlic or ginger sadly chillis are no longer an option for me 😥😣

Maybe a bit of sumac could be good? It's a bright, almost lemony flavor, but it's completely unique. Very Middle Eastern so it goes very well with lamb! I'm not sure how much you'd want to use to substitute, since it can be pretty potent.

You could try Szechuan Peppercorn. They are known as a tingly spice rather then a spicy pepper. Some other Mexican chillies have more smoky and fruity notes so you can experiment with that. Unfortunately, most chillies have capsaicin which will hurt your stomach. Tell me how it goes!

Any Muslims out there can explain to me whether or not you guys can use regular pans for cooking? Like, if someone cooks bacon in a skillet, washes it, can you use the same skillet for a ḥalal dish? I'm asking because I just moved, and I've been basically roasting my entire kitchen for over a week now to make it kasher (I have a lot of pans and utensils).

I think what makes it halal or not depends on how the animal was killed and the condition it was in

It depends not only on the type of meat (pork is definitely not halal), but also on how it is slaughtered. Although some people may do things differently (e.g., I go with everything regardless of the way they're slaughtered as long as it's not pork)

Such an amazing chef i love all your recipes but i have one question !! Kosher salt that’s you used for jewish food and for halal food all you ingredients should be in Halal terms, just prefer if you use any normal salt

I've made this dish and don't like it. The taste of cumin is overwhelming. You can't really notice other spices and mint. Also the amount of oil is ridiculous. Half if it would be enough I recon.

I came here for noodles made of lamb. These are just regular noodles with lamb sprinkled on top. I am very disappointed,

There’s a little restaurant in Chinatown in NYC that makes this same dish, but with homemade, hand-pulled noodles, and it legitimately might be the best meal I’ve ever had. Xi’an Famous Foods, if anyone’s curious. 🤌👌
