🍋Ingredients
• 1/4 cup vegetable shortening
• 1/4 cup unsalted butter, softened
• 1 cup powdered sugar
• 1 large egg
• 1 tablespoon lemon zest
• 1/4 cup fresh lemon juice
• 1 1/2 cups all-purpose flour (or gluten-free flour blend)
• 1/2 teaspoon baking powder
• 1/4 teaspoon salt
• 1/2 cup powdered sugar (for rolling)

🍋Instructions:
1. Prepare and Preheat the oven to 360°F (180°C). And line a baking sheet with parchment paper or a silicone baking mat. Combine Dry Ingredients in a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
2. Cream Butter and Sugar: until light and fluffy, about 2-3 minutes.
3. Add Wet Ingredients: Add the egg, lemon zest, lemon juice. Beat until well combined.
4. Mix Wet and Dry Ingredients: Be careful not to overmix.
6. Chill the Dough: This helps to firm up the dough and makes it easier to handle.
7. Rolling: Form and Coat Cookies
8. Bake: for 10-12 minutes, or until the edges are set and the tops have a crackled appearance.
9. Cool: cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
