Tofu is a good source of protein and is one of the main ingredients in this zesty vegan rice bowl recipe.
➡️ In this recipe, I form a thick paste with strained tomatoes and a mix of onions, garlic, oregano, rosemary, thyme, cayenne pepper, and more.
Then I steam the basmati rice on the pan till it is cooked then I add the fried tofu to complete the dish.
This is a very easy recipe if you're bored with your usual rice bowls.
➡️ This healthy and protein-rich vegan rice dish can serve as a snack or a stand-alone dinner. Add a twist to your regular rice bowl by using this savory tofu rice recipe that can even be enjoyed even by your non-vegan friends.

▶️ RECIPE INGREDIENTS: (3 to 4 servings)
400g Firm Tofu (I have used organic non-gmo tofu)
1+1/2 Cup / 300g White BASMATI Rice
(Wash the rice thoroughly until water runs clear and Soaked for 30 minutes)
3 to 4 Tablespoons - Light Olive oil for frying tofu and Onions
1+1/2 / 200g Cup Onion - finely chopped
1 Tablespoon Garlic - finely chopped (4 to 5 garlic cloves)
1/2 Teaspoon Dry Oregano
1/2 Teaspoon Dry Rosemary
1/2 Teaspoon Dry Thyme
1/4 Teaspoon Cayenne Pepper or to taste (Optional)
Salt to taste (I have added total 1+ 1/4 Teaspoon of Pink Himalayan salt)
1 Cup / 250ml Strained Tomatoes / Passata / Tomato Puree
2 Cups / 500ml Vegetable Broth
(the above quantity of broth will give you chewy rice, however, if you like your rice slightly soft use
2+1/4 Cups / 525ml Vegetable Broth)
Garnish:
1/4 Cup / 10g Parsley
Ground black pepper to taste (I have added 1/2 teaspoon)
▶️ METHOD:
Wash the basmati rice thoroughly until water runs clear and then soak for 30 minutes. Remove the tofu from package, drain the water and dab it with a paper towel. Cut it into cubes and allow it to sit on a paper towel to drain any excess water.
To a heated pan add the oil. Add the tofu, salt and lightly fry one side for about 2 to 3 minutes on medium heat. Flip and fry the other side as well. Remove from the pan and set aside.
To the same pan add the onion, 1/4 teaspoon of salt and fry on medium-high heat until the onion starts to caramelize. Now reduce the heat to medium and add the chopped garlic, oregano, rosemary, thyme, cayenne pepper and fry for another one minute or until fragrant.
Add the strained tomatoes, mix well and fry until it forms a thick paste and the oil starts to separate. Drain the rice and transfer to the pot. Add salt, vegetable broth and mix well. Bring to a GENTLE/MILD SIMMER (please note we do NOT want to boiling the broth here).
As soon as the broth starts to simmer, cover the lid right away and reduce the heat to low.
Cook for about 20 minutes on VERY LOW HEAT, we are just trying to steam the rice here, so if the heat is higher then the rice at the bottom of the pan will burn. Once the rice is cooked, turn off the stove and remove the pot from heat. Add the fried tofu, parsley and mix very gently as the rice is fragile at this point and we don't want to break it. Cover and let it rest for 4 to 5 minutes before serving.
▶️ IMPORTANT TIPS:
- Thoroughly wash the rice until water runs clear, this will get rid of any impurities/gunk and will give a much better/clean taste
- This recipe uses White Basmati Rice, if you are using a different kind of rice adjust the water and cooking time accordingly
- Get rid of excess moisture by dabbing the tofu and allow it to sit on paper towel
- Make sure to fry the tofu lightly on both sides. DO NOT fry it for too long otherwise the tofu will turn rubbery (unless preferred)
- Adding salt to onion will release it's moisture and will help it cook/caramelize faster, so please don’t skip this step

I have vegan grandchildren and this recipe takes away the HUGE stress of figuring out what to cook for them. I've never cooked tofu before and this recipe makes it seem doable, I'll give it a try. Manh thanks.

thé key thing to know about tofu is the fact that it does not have any flavor and absorbs the one where you put it fish or meat or chicken or any spice .

They have great, versatile ideas that are really easy to cook. I recently cooked a rice and lentil recipe they posted about 4 months ago and really enjoyed it.

We live in a wrong society, whether it’s the practice or amazing cooking- it’s hard to be a vegetarian though I will be, but I always wish I were because it would be easier. Children should be in a correct environment - for example vegetarian or vegan lifestyle is perfect, thank you for creating that ambiance in their growing up time.

Hey, vegan grandchild here! The best thing to do for us is to make your regular dinner that you're use to making, plan on putting animal products in at the last minute and just remove some of the food for us before you do. That way you get to eat what makes you happy and so do we. It doesn't have to be any special creative vegan meal but they sound very lucky to have you trying new things just for them :)

I cooked it today, first time making tofu rice and I loved the rice taste. I didn't add the veg broth stock because I wanted to keep it more natural. If you like it spicy, you will need adding extra chili powder, it's very mild in the recipe. Great recipe ideia for vegan meals :)

Made this recipe this week and Boy! did I love it! So simple, so flavorful and on top of it Basmati rice with Tofu... can't get better than that! I have just learned to do alot with tofu after struggle to cook with it and I now I am seeing where people saying tofu isn't good and it messes with hormones, like what the heck can I eat then!

Just made this and nearly burned the whole thing in my wok, but thankfully saved it in the nick of time. Realisation dawned on me that I should have stirred the rice half way cooking as it is tomato base. Very tasty and zesty and it is going to be my rotational meal on a friday being a non meat Fridays. I would like to take the time to thank You so much for uploading this simple though deliciously tasty meal. I've been vegetarian going on vegan for a good number of years now without dairy like eggs and fresh milk from about 14th September 2002. Am a good few stone overweight as have still been a big bread eater. I even screen shot the ingredients from underneath the video description and deliberately went out to buy most of those ingredients, the ones I never had here were I live, to make this dish just as has been demonstrated. It's Preparation day for me for The Bible Sabbath so this exact dish was made and the quarter I just ate has set my taste buds off to a place they have not been in a what seems a very long time or even never. I must say, I started watching the video yesterday but stopped in few seconds as I thought it's just another recipe with various sauces but then I'm glad I watched it again today as it's different from others. I'm looking to eat more plant based food. I was shunning tofu for a while because of the health warnings and so forth. I figure it's like with Tuna and that you can eat a certain amount and it's okay. My biggest thing is the warnings that soy is a major GMO product but if I focus on getting non GMO and also organic if possible that should help. I like tofu so I'm going to start back on eating it more often. Thanks for the recipe idea.

I just discovered your channel today. My doctor suggested including some plant based recipes in my diet to aid in lowering my cholesterol. Yours look delicious, as well as simple and easy to follow. I have yet to see confusing items like coconut aminos or explaining this recipe is for alkaline vegans. I didn't realize there were different types of vegans. Congrats- just add more veggies you already like as you get used to the plant based foods. Take it easy on the oil- learn to cook without it- (lower the heat, stir often , and add a tablespoon or two of veggie stock or water to keep things moving), you'll do great!!

Nice Recipe. You can easily bake the tofu pieces on parchment paper so it does not stick,using no oil for the same texture and taste.

This is Incredibly Nice! I think if (hopefully when) I can make this, it would be nice to add peas, carrots, and broccoli just to make it more complete! Or you could make a vegetable stir fry with mushrooms and add to it!

This looks really lovely, thanks for such a calming clear video. 💆 I just wanted to ask, what is the reason for soaking the rice before cooking it? I usually wash it beforehand but haven't soaked it before so I was wondering what difference this makes to the end result? Thanks 🤗

Caramelized onion garlic tomato and some spice are the key to have tasteful rice mix! You’ll see this combo in most one pot meals.

This looks AMAZING 🤩 I Got try it!! Just one question - how do you get your board cleaned so well after cutting herbs or staining vegetables on it? I can’t seem to be able to get the stains out 😳

Thanks! I clean the chopping area with dish soap and right away dry it with a clean cloth, to prevent any warping of the wood. I also oil the board couple times a year.

I cooked this today. Turned out to be great. I just couldn't get the tofu to be golden brown and crispy. They released a lot of water and then didn't get golden brown

I think it would be easier to fry the tofu as a large block on the pan instead of individual cubes so you don’t have to flip them one by one. But great recipe. Looks good.
