I thought immersing meat in a hypertonic solution would draw out water from the meat, there should be some other reasons causing the muscle fibres to uptake water
In microscopic terms, would this be like the salt diffuses into the intercellular fluid because of the concentration differential, and it draws water out from the intracellular space by osmosis, thus diluting the salt in the intercellular space, which in turn draws in more salt from the water bath?

Not sure what you mean... But if you put it in salt water long enough, in the end the salt concentration will be the same

@@HiThisIsAchi Intercellular space is the fluid filled space outside of the cells, whereas intracellular space is the space inside the cells. The two spaces are separated by a semi-permeable cell membrane that surrounds each individual cells and regulates the ingress and egress of substances into the cells.
