Thanks guys, it was interesting to see you wash the beef strips, though I was expecting you to put bicarb to tenderise it. I dont think I have ever seen the strips that thick before but reading between the lines, I imagine it is your Mum's choice and you would have thinner strips. Just like you, I usually order this as a side dish, it is so yummy.

yeah, but when I did this in my takeaway, I made it thick like mum, just you could taste the beef much better, and salt water does the same as the bircab, its why people brine meat before deep frying so there is no need for the bicarb

A few days ago i had " Fried shredded beef, stir-fried with sweet chili, paprika, leek, garlic, sesame seeds & spring onion"(Copied and translated from the Menu), and it was really great. I want to cook some myself at home and come as close as possible to that same recipe as it was so good. I haven't actually tried other versions yet and couldn't possibly say that it is the "best" one out there because that would be beyond ignorant. I am learning from your video right now and will try this one in a few days and see what i think as this seems really good also. I had to come back and leave a comment. Tried your recipe and my god, it was top tier! I didn't have potato starch so used half cornstarch half normal flour and it was still better than my local. Would really like to see you guys do a home friendly version of the peeking duck as I know it's very labour intensive from the restaurants point of view

I've made a a similar version of this a few times but I've used fresh orange juice with a splash of orange cordial plus the other ingredients and it's always goes down a treat 😂

Without doubt, the best Chinese duo teaching Chinese restaurant food, I have their 1st cookbook and now, the 2nd, and can’t wait to try out their recipes. It would be nice if they showed some traditional Chinese (Asian) food, but I have Irene Kuo The Key To Chinese Cooking as my go to cookery book for that style of Chinese food. In Dudley there used to be a Chinese takeaway that did Beef Schezuan, but the beef was either like crispy beef or salt and pepper beef. Cut thicker and longer that crispy beef, but it was so delicious. Never found anywhere else that does beef schezuan in the same way.

Can't remember where I read it now but - cut spring onion into lengths of about 2 in/5cm. Then cross-cut several times for around 1/2in/5mm at each end and drop into a bowl of iced water. Leave it in the fridge for 10 minutes or so and the ends curl out like little umbrellas. Looks great as a garnish but really easy to do. I like easy!

I seriously need to cook some of this. Another of my favourite dishes and one thing I'm noticing is what is going into a dish. I've not been too keen on eating some dishes because I don't know what they are. Thanks for this channel and showing how to cook these delicious foods at home. Where would you recommend going to look for MSG please and have both your cook books on my shopping list.

Great question! Velveting is just a process that make meat tender, people often think Velveting is a marinade, no, the brine water velvets the beef and is often used for deep fried chicken to stop it drying out. So you can velvet meat with no marinade, as we did here, hope that helps

yes, but takeaways won't be using it, people think they do because they see pineapple chunks in it, but if it was in there its very very obvious, its normally why when people cook it at home they say its never the same, I then say "I bets you're using pineapple juice, try it with out" and they alwasy say how much more like a takeaway it tastes, but if you like it then go ahead :)

@@ZiangsFoodWorkshop Will do, chef. My little brother killed himself a couple of years ago. One of the things he left specifically for me was a copy of your Chinese Cooking Bible signed by you and your mum, with handwritten notes inside on the changes he made to your recipes. I'd told him about your channel and how great I think it is. Your first book is pretty precious to me now, because it's part of my memories of my brother. Keep on doing what you're doing.
