The balling up of the parchment paper before trying to fit it into the pan is genius! Whoever sent that in to you, THANK YOU! It works for breads and anything else you want to form fit to a pan.

I saw a TikTok video where someone substituted de-seeded zucchini chunks in place of apples for a crisp recipe. They pan fried the zucchini with cinnamon and sugar, then added the oat crisp topping. I’d love to see you make a recipe like that! Vegetable desserts are fun. 😁

This sounds delicious! So few folks use the technique of putting the zucchini in the dry ingredients! I also do that with nuts, berrries, or other things that can sink in the batter. Good cooking!

Do not throw away the zucchini liquid. Mix it with the wet ingredients - there's lots of nutrients in it.

Smelled so good in the oven. I found the cake was still far too wet after baking. I squeezed the zucchini well, maybe less milk? Wondering if a flax egg might help next time. The streusel was fantastic, will use that again for apple crumble.

I cannot find buckwheat where I live so I used whole wheat in place of the buckwheat. Still used the oat flour as directed. It came out great

Do you measure out the zucchini 1.5 cups (375g) before squeezing out the moisture? I weighted it after and I think I used too much as the cake was really gummy. And it looked like a lot more than 1.5 cups but the weight was correct. Flavor was good so I want to try it again with the correct amount of zucchini.

Great recipe! So yumalishious! Have you tried freezing this? If not, do you think it would freeze well? I'm trying to use my zucchini as I harvest and freeze the whole product. My husband and I are more likely to pull that from the freezer in the cooler months than pull out grated zucchini and bake something. Our winters are so much busier than our summers. Thank you!!

ALSOOOO, I forgot, the topping...it has not worked so far😮💨: the mix of oats and dates remains "non-plussed", it comes out of the oven just as it went in, so last time (today) I did not use it at all since instead of this crispy-crumble topping it tastes raw and it is all loose on top of the cake, any idea why is not working out?

Hi I love your channel but as I am from England I sometimes need help with ingredients. I know zucchini is courgette but in the UK coffee grounds are what is left over after you make coffee, is this what you are using? We use ground coffee to brew coffee but I have never knew you could use it as a flavouring. Hope someone can help.

I used 1/2 the amount of dates in the batter plus 2 ripe bananas. I used a little less liquid. I substituted raisins and a tiny handful of walnuts in the crumb topping. Turned out yum!!

Hi there, fourth time around, cake -without topping- came out PERFECT. I have had an issue with measurements. I live in Barcelona (SPAIN) so I am used to metric and grams. I kind of used cups for some ingredients and grams for others, and it did not quite work out. I ascertained that the amount zucchini in grams does not correspond to the amount of zucchini in cups as quoted: a lot of zucchini when measured in grams and almost half of it when measured in cups, could it be that you posted the equivalent amounts in grams wrong? looking up US and metric equivalences only got me more confused...sorry. The cake is fantastic though, so simple but wholesome and with the right amount of sweetness. The second issue I had was the dates. The recipie calls for medjool dates, which I can easily get, however they are SOOOO EXPENSIVE in Spain, average 16,00 EUR/kg (or 12,00 EUR/kg if I purchase a 5 kg box). With the regular, cheaper (smaller and drier) dates the cake is nice, but with the medjool dates, the cake is just dreamy. I still think is worth it, but could you tell me if there is an equally healthier and more affordable alternative to dates? Thanks for the recipie, I love your channel. Let me know if you would like this recipe translated into Spanish, I will gladly translate it for you (and Catalan too if necessary).
