I'll be making this in a few days! I only cook Paleo food, I won't use the wheat flour, instead I'll add coconut flour! I also make my own tomato sauce with organic tomatoes, I remove the seeds before also, add dried tomatoes and dry or fresh aromatic herbs. My sauce is the base for curries and many foods, like this lasagna ! Thanks for the recipe's ideas!!

I made this and it is by far, the best lasagna I have ever made. Took me three hours. There are steps I can do the day before and since I’ve made it already, I know what to expect. Sooo good! I took pics too. Should take me about an hour next time. I followed the recipe to a T.

I made this today and it turned out awesome. I am so glad I used this recipe scratch sauce instead of from a jar. I used fresh spinach and cooked it down because I had it on hand and worked great. Took me about 2 . hr. And a couple bandaids!

I dont have any large zucchini or a mandoline and I was thinking of what I can do and I was guided to cut the zucchini in large matchsticks to resemble ziti pasta. I am sure I would get a similar result. If I remember, I will post a picture on Facebook and tag you. You are an inspiration

Glad you mentioned the egg in the ricotta mixture when you were layering the "lasagna" as you didn't mention it when you mixed the ricotta and cheeses, etc. together earlier. I learned from my Sicilian grandmother - one egg per pound of ricotta.

If you balance your mandoline on a pan it works better. When using the mandoline on a large item I use a rectangular baking dish under it. Your recipe looks very good. I have a lot of cucuzzi squash very similar to zucchini going to try it with that.

Hmmm i didn’t grill my zucchini when I made zucchini lasagna I just put the zucchini in raw it cooked up nicely in the baking process it was soft enough to cut but still had a good crunch to it, I also used fresh spinach and basil layer it came out great

Brenda this recipe caught my eye because I love zucchini and lasagna. How is it that one can cook lasagna without noodles. Well, as Paul Harvey once said, now you know the rest of story, this is a fantastic idea for us and something certainly I might like to try because zucchini is probably my favorite vegetable. To solve the moisture with the zucchini, we dehydrated the zucchini slices. We then store it in a vacuum sealed 1/2 gallon ball jar for use throughout the fall and winter. Its almost like using noodle.

You can substitute Coconut flour. The little bit of flour absorbs and moisture.

Might I suggest, instead of dusting everything in flour to use dry Parmesan cheese. That how I did it when I make my zucchini lasagna (because I am eating keto as a diabetic), it works well! I also dehydrate my zucchini slices the day before... Thanx for sharing!

Aloha, a good salting method is soy sauce, I know it sounds strange but it takes the bitterness out. I use this for my eggplant parmesan.. 🍅 🍅 🍅🌿 🌿 🌿 🍄 🍄 🧀 🧀 🧀. LOOKS 😋 YUMMY

that wire rack your cooling the zuch on, you can also put on a cookie sheet and put in the oven to dry the zuch out that way, do the whole batch and save time!

Thanks for the informative video. I have the same mandoline - I think it was designed to sit on top of a bowl - that is what the little indentations are for. But I still think we should get better mandolines! :-)

+cuddlesaurus Hi thanks for your interest in my recipe. I plan about 4 hours ahead. It stays hot for a long time,, so if it gets s done quicker you can let it rest. Enjoy.

Oh my gosh it looks so good. I used ur video to make lasagna with gluten free rice noodles in the past and without your delicious herbs and mushrooms. But i am ready to try this way, cant wait to try it out.!!!! Did you find cookimg the meat exactly how you did made it soft and tender? Thank you!

You could use a keto friendly flour, coconut flour, almond flound adding a nutty flavor, You could use flaxseed meal adding more protien and again a nutty flavor, but you get the idea.

Great video....Thanks for sharing your recipe with us! Just a suggestion....rest the bottom of your mandolin on top of a large bowl and slice the zucchini. You won't have to stop after each slice to move the zucchini slices.

mrspezz1, she was very gracious in her reply but seriously, why would she know the precise carb content unless she sent a portion of the lasagna over to a food nutrition testing lab because thats how kcals are measured. Shes not a big food manufacturer. Or you can do like the rest of us and Google the nutritional content of ingredients, other great sites are livestrong.com, myfitnesspal.com are also good sources of info. But seriously she was AWESOME enough to share this recipe and vid with us;she shouldnt have to be a food scientist, too.

@@NaturesFairy I cooked it last night! I actually used meat - pork and beef combo! It turned out great! FYI, I tried a different recipe I found on KZbin which deep fried the Zucchini. I wasn't a fan of the deep frying. It was also meatless ( I can go either way). It was my first attempt. It turned out ok, but I like your recipe better! I did run out of Zucchini and had to throw in some Squash as fillers - it worked out - and could've used more sauce....I'll know for next time! Thanks for the Video!

Your welcome. It’s always hard to figure out how much Zucchini to use. I just made a new recipe. For Zucchini Raviolis,,, in that recipe I put the count of how many zucchini strips to use. It was posted a few weeks ago on my channel and it’s easier to make that the lasagna. Thanks for sharing your tidbits about the meat you used. Have a good weekend. Brenda
