Unfortunately thats not a balti. Balti is a style of cooking in a balti bowl on high heat. Their is no yoghurt in a balti and no bayleaves. And also a balti has to be cooked with base gravy as it is a high intense quick cook to infuse flavours also including tomatoe paste. A balti is cooked in a balti bowl and served in a balti bowl. Guys do your research for a true balti

You can use chicken stock/broth that doesn’t contain Italian seasonings. Instead of chicken broth you can just add water and a bit of msg or chicken bouillon.

Can you freeze after rolling to cook at a later time?

Yes, I freeze them for later use. Place the folded samosas on the nonstick baking sheet on a tray. Then let it set in the freezer for about 2 hours. Then place them in the freezer-safe bag. You can fry them straight away before serving and no need to defrost. Hope this helps.
