Hey, i tried this recipe but something is wrong it is dense and for some reason it did not rise well during proofing period. I'm using fresh yeast.

Was your yeast proofed in water? This shouldn’t happen as this recipe is pretty much fail proof. Make sure your yeast proofed in water and keep the dough at warm place for proofing. I assume you followed exactly the same recipe. Hope this will help Thanks

It will not rise much without it. Psyllium husk is a plant fiber which is perfectly fine after heart procedure.

This recipe will not work with 100% rye flour but you can have it in combination with bread flour. Rye flour has a different type of protein and it’s difficult to work with. But few changes in recipe can make it work.

I have used 20 grams of it in one bread loaf. This loaf would give 16-18 slices, which means 1.2 grams per slice. Psyllium husk is a plant based fibre and it’s absolutely okay to have it in limited quantities.

Good job. I appreciate how you discuss the reason behind some of the ingredients, like the psyillium husk fiber for texture and binding. I have used ground flaxseed as a binder in gluten free breads, works pretty good, but I would like to explore other options. Banana and apple sauce also worked pretty well, but add flavor and moisture. It's fun to intuitively play with ratios in gluten free stuff, more forgiving than gluten flour. All my cookie experiments were tasty, if more scone-like than cookie sometimes. Ground lentils and water made a surprisingply resilient flatbread all by itself, no additional binder. Risen bread is harder, but I like flatbread more generally, so the options are diverse.
