There is a good reason to let the batter rest, it’s to give the flour time to hydrate. Of course the liquids also activate the baking powder too, so you get a nice fluffy batter.

Thank you, Diane! I just brought a whole trunk load of donations to town today. Felt so good. We have four kiddos in a wee two bedroom rental so if it’s not being used/loved- it’s gotta go! You’ve really helped me let go of things I never thought I could before.
