They have something they are interested in, however are unable to comprehend that others are not only disinterested, but also even less interested in paying for the uninteresting thing. They are so wrapped up in their thing, they fail to see others are not interested ans so they fail.

I disagree about not needing a thermometer. HOW do you KNOW what is the proper temp, if you have little/no experience. What is hot enough, not hot enough, or too hot? I've tried it, and my hand say it is hot enough, but the thermometer shows NOT hot enough. So my hand is NOT a good judge of temp.

A lot of people in the comments have never started a business and it shows. It’s easy to point out all the flaws in your plan after the fact. You were “in the arena”, which is the most courageous thing you can do. The vast majority of first time business are just a learning curve for the next project. Thanks for this video. It's very helpful. On a different note (and I'm sure someone else has mentioned this, lol), I'm surprised you're not concerned about your peeling chrome coating flaking into your espresso. I'm sure by now (since this was 5 years ago), you've gotten yourself a new espresso machine.

As far as water goes. A reverse osmosis system with remineralization would be a better option. It goes as far as to remove PFAS chemicals which cause cancer and heart disease

Oh brother, your head got the best of you. You wanted to make coffee for people but didn't understand your environment. And then you wanted the absolute best of everything but didn't understand the cost. I think that right there is what you learned. So you could have made the video two minutes long. Instead of letting everybody know that you couldn't afford anything in the first place because that's not what makes good coffee. What makes good coffee is the coffee that people like. So what type of people were you trying to attract? It didn't seem like you thought that out either. But there's your 12 minute video and your 754,000 likes. I'm sure that got monetized. Noticed your power changes are nice and smooth. Is there a way of performing filtering or rate limiting the demanded power changes with artisan? I've only seen examples of buttons making step changes.

I agree the Philos is nicer looking and is probably built better, but does it make a better cup of coffee. Then there’s the varia 6. Isn’t the flavour the #1 factor. Yeah, looks count, build quality, work flow etc. but I think most of us are chasing flavour.

Absolutely and the DF83V might be the best bang for buck in terms of flavour of any grinder. But being nice to use is part of it as well, and I like my coffee grinder to be a satisfying part of the experience. The VS6 has some workflow issues too that I'll talk about at some point, which just reminds me how much I enjoyed using the Mazzer. The differences in flavour are noticeable, but small between 64mm and 83mm burrs, and the feeding mechanism for the Mazzer is better thought out so the feeding rate is right for the burr size.

Unless you've since run a successful cafe, how would you know your lessons are the right lessons? I disagree with the throwing espresso away just cos it isn't perfec, but I don't have successful cafe either. My mate set up a lovely one, the interior was stunning, top end machines, great coffee, but it was in the wrong place.

Sorry if I’m wrong but those filters you use for your water definitely don’t make “distilled” water? That’s just tap water with a few contaminates filtered out but very much still with a lot of minerals?

I tested it with a water mineral reader and it was around 15ppm, with one filter through, which is good enough for me. It isn't completely distilled but I think it does an excellent job for a fraction of the price of a reverse osmosis machine.

I recently got my hands on Neouza's metal tamping plate holder, and I have to recommend it to you! It fits my 58mm portafilter perfectly, making tamping super stable-no more wobbling. Plus, it looks great on my espresso bar, instantly elevating the vibe!

Great video, thank you. I own Pesado HE[%] basket with matching Pesado naked/bottomless portafilter as well as the Pesado 1.9mm puck screen (I do not use puck-screen regularly but it works!). I used to use VST basket for last 10 years with very good results. What I have noticed is this: using Pesado HE[%] basket and other similar HE/HY baskets with a lot of holes and more holes area is that they extract espresso faster. Therefore they do not need the traditional extraction time of 30 seconds which traditional baskets do need. So you get a similar or better espresso from Pesado HE in ~22-25 seconds than you get from VST/IMS/Pullman in ~30 seconds, for the same dose. You do need to grind a little finer for the HE/HY baskets though, else you get a "turbo-shot" of 15-19 seconds which is likely to be under-extracted. The puck prep is otherwise identical i.e. WDT, etc.

Bought an espresso scale once that would keep the shot weight on the screen when it finished. Only problem - it decided the shot was over when the weight stopped incrementing. i.e.. between the 1st and 2nd drops. Company said espresso should be continuous and to adjust my technique, lol.

I have an old Rocket no pid, during extraction the temp changes less that 1 degree c at the group. It's nonsense and marketing hype. Subjectivity on display. Only true testing is double blind testing. Sorry I think point 7 is nonsense on zhx machines. Just buy a thermometer and attach to group

I also had a small cafe. I think the cost of the coffee machine is not a big issue, because it's the one thing that brings in money. but doing your own roast is a luxury, because it takes up money and time. And you can give out excellent coffee with already roasted beans of a supplier. I did also tried to save money by choosing a cheaper machine. but really I think this was not the problem. Investments that really don't get you more money are just a nice to have. A good coffee machine is important for a cafe. Having said that I think even inexpensive machines can be able to make good coffee, also many cafes do very bad coffee with great and expensive machines. Especially if the customers don't know what good coffee can taste like.

Coffee stalls and cafes need to be located where you have a certain mass of people. You will only ever capture a percentage of people at any time in a village or small town when they are so close to home. That is why they work so well in train stations or bus terminals and urban centres. This is all the more relevant where you could not provide seating for customers and a pleasant alternative place to be outside the home.

I agree. It's so refreshing to see somebody discuss one of their failures and he's helping other people to learn from his mistakes too. Instead, people are making very disparaging, unkind and arrogant comments. I expect none of those comments come from successful entrepreneurs who know how challenging is. I myself have tried two businesses not related to coffee and I know how incredibly difficult it is and emotional too. I think this is also a shame because it could discourage other people on KZbin from discussing their failures and then we all lose out. A failure at something isn't the end of the world, it's just a stepping stone on the journey that provides valuable lessons.
