Think of rice as the grain that sops up sauce. that’s literally what it’s for, putting sauce and protein on. It’s a replacement for bread. Actually in Japan rice flour is used instead of wheat flour as wheat is hard to grow. It’s a softer bread and slightly more crispy crunch on fried things. They also import a lot of flour for baked goods and pasta.

The US to china flights you need a Visa. It’s called a tourist visa. The usual requirements. I was planning a return to Guangzhou or at least hong Kong this year but passport issues you know. So staying in the US again.
