Great demonstration. Thank you. However, I had to replay three times to understand how long it would take (10 to 15 minutes) because the music was too loud in that in that area.

Hey, my loaf keeps undercooking the middle. It's got a puddle in middle while the outsides are firm. This results in the cake center collapsing. What am I doing wrong here?

After further research....he has given the absolute wrong bake time. This takes about an hour to bake....not 25 minutes.

Lovely but if I make it again, I'll use 20% less sugar as I prefer to taste more of the slightly bitter orange flavours and perhaps dial up the zest.

One can make their own candies citrus rind as well. There's a recipe in The Joy of Cooking. They're very time consuming, but worth it to save some money. Also, candy is always best done on a cool crisp day.

Too much sugar for modern times. Too much diabetis and obesity. You get the same thing with half that sugar and a little pectin powder

Actually, the lower the brix of the syrup will yield a more fluffy nougat.
