Hi Scott - I haven't tried this. They would take much longer to roast if you roasted them whole and I don't think you'd get such a good rounded flavour. The spices wouldn't mix so well with the caramelised sugars from the beets if you added them later... maybe - I'm just guessing at that, but it's worth a try I guess!

Our beetroots on our allotment here in the UK are not ready yet. I've got this one on hold until they are, along with the Beetroot and Feta cheese tart. Will let you know how it goes.
