For anyone having trouble getting it to thicken: I added 1 teaspoon of cornstarch mixed with a bit of water and I turned up the heat make sure that a lot of the surface of the bowl is touching the water. Mine turned out great :)

Hi there , the recipe was indeed lovely and a great help ..... Just a suggestion or 2 if u wish to try it . whisk the butter and sugar together till well mixed or a bit smooth add in your eggs there after and whisk again till well mixed Add in your desired quantity of organe juice or lemon juice and mix again The reason for doing this is to avoid any lumps in the mixture once it is subjected to heat ( at this point and time your mixture MAY look curdled do not worry as it will get ok once you heat it ) Put this mixture on medium heat for 15 mins approx or till it coats the back of you spoon and when u run your fingure through the back of the spoon the lines SHOULD NOT meet . pour into your jars ( it may look runny but the curd will thicken once cooled down ) lay a cling film over the top of the curd this will prevent a layers from forming on top once set ready to work with or consume ( Orange/lemon zest could be added either before you put it on heat or remove it from the heat depending on how zesty you want your product ) Do try this if you think it makes sense ....... This is exactly how I make my lemon and lime curds. Works like a charm every time. I've tried making orange curd a few times (once I used 3 types of oranges and reduced the juice down in order to bring the flavor forward but it was a huge waste of time. That recipe also called for the use of an orange liqueur but said it was optional. Nope! I think you actually do need it) but I've never made one where the flavor or thickness was there. At this point I'm sticking to curds I know will work. Checked this video out hoping his was different in some way but... 🤷♀️

Thankyou for the recipie. This was my first curd I've ever made and I used oranges from my garden. They're so sweet that I used less sugar. The mixture didn't thicken too much after about 45 mins on a ban Marie(spelling) so I went ahead a let it cool and hope it firms up in the fridge. Any advice? maybe low direct heat is needed?

Yes, it's pretty much the same thing. The only difference is that in lemon meringue pie, it might have more egg, but it should still work fine

Caster sugar is granulated sugar. That's what they call it in Britain.

You can use granulated sugar. I use it when I make my lemon and lime curds. If you don't feel comfortable doing so and you have a grinder just blitz up the granulated sugar. You'll then have super fine sugar (caster sugar). Hope this helps...

The pan bottom may scorch. Why don't you want to use one? Put one pot on top of a tight fitting pot of simmering water. It's easy to make one but don't let water get into the curd while it steams.
