I'm sharing our family favorite recipes inspired by Chipotle Mexican Grill. Eating at this restaurant can get expensive! Our solution is to make dishes inspired by Chipotle at home. Enjoy!
Recipes:
🌯 Chipotle Chicken

Recipe makes enough for 10 pounds of protein
1 large red onion
6 cloves whole garlic
4 tbsp oil (53 grams)
2 tsp cumin (9 grams)
1 tsp black pepper (less than 1 gram)
2 tsp salt (12 grams)
2 tsp oregano (2 grams)
4 tbsp chipotle pepper puree (64 grams)
2 ounces water
🌯 Beans
1 pound of beans (black, pinto or peruano 😍)
6 cups of water
.5 onion chopped
3 cloves of minced garlic (9 grams)
1 tsp cumin (3 grams)
1 tsp salt (6 grams)
1 tsp oregano (1 gram)
.25 tsp pepper (less than 1 gram)
2 tbsp chipotle pepper puree (32 grams)
🌯 Loaded Mexican Fried Rice
1 onion chopped
3 cooked potatoes cubed (frozen cubed potato will work well)
2 cups leftover rice
2 cups drained beans
1 can stewed tomato drained
2 tbsp chipotle pepper puree (32 grams)
1 tbsp cumin (9 grams)
1 tsp paprika (2 grams)
.5 tsp pepper (less than 1 gram)
salt to taste

I love how you re-utilize the disposable plastics for the raw chicken and the peppers. I didn't know that guac freezes well! Good to know. Also love your Mex fried rice idea. This is an info packed video.👍

I cut my avocado in half then the piece that still has the pit in it cut it in half and it's a lot easier to get that seed out

I bet the plastic baby food containers with the kids, the little rectangle ones that are 4oz, would be great for freezing the guacamole, then you'd have a lid too. And luckily I have an 8 month old grandson so plenty of baby food containers I can save.

They sound like they would be! I'd still probably put a layer on top close to the guacamole though. Any air pocket will cause the top to turn a brown color. Taste wise it'd be ok, but not visually appealing

My daughter has recently become vegetarian and this is one of the things she missed the most. Chipotle was her favorite. She was listening to the video across the room and is excited for me to try this with tofu. Thanks Wendy!

Me too . We buy the raw chipotle peppers , soak them in hot water , add tamarind , salt , garlic And make it into a paste *using* a stone mortar and pestle - saw some Mexican women doing it on you tube channels. Then *use* them in everything that we *want* the chipotle flavor . *Thanks Wendy* in boosting my confidence . Most of the sauces out there have a heaping burst of corn oil , sugar and *other* preservatives . It is not worth buying them because we are paying for cheap additives and flavorings . We would rather spend the same or even less and eat the real thing. Just my 2 cents . Thanks .

I was just thinking the other day I wanted to make these fajita bowels at home that they make at our local Mexican restaurant. I think I will now. Great idea on the guacamole in the little containers. I love guacamole. Thanks for sharing.

I prefer making my own guacamole from scratch just mashing an avocado and adding a bit of salt. Yum!

I love the tip of saving the chipotle peppers. I typically buy for 1 recipe and end up not being able to use the rest before it goes bad. Thank you!

I love your videos. 💕I farm avocados and here is my tip. You were having trouble removing the seed from the avocado half, just cut the half in two lengthwise , the seed will be easy to remove. You can still cut the avo in the shell or slice it for salads etc. Keep up the good work - there is too much waste in the world already😄. So great that you deal so graciously with a “mixed “ family, I am vegan and deal with the same thing .

I love recreating chipotle bowls, it is so much cheaper! We usually always do steak but your chicken looked really good. I love how you made the chipotle cubes and I want to try your marinade! I love your recipes. I can’t afford to eat out and my husband and I don’t eat meat. I’m glad that you made modifications because our nephew does eat meat. I can share with him how to change things up. I may have to watch this video a couple of times. I make my basmati rice in my rice cooker and it turns out great.

I’ve never eaten at Chipotle’s, but your meals look very good. Thank for for explaining how to prep and use canned chipotles in adobo-I had an overly spicy experience with it once. I may buy a Chipotle take-out burrito to share with my husband and see if we like it. Neither of us have the cilantro gene 😉.

The blending helps even out the spiciness so you don't bite in to a seed. Learned that the hard way 😅

Wendy, thank you so much for another great video! I was going to ask how you "sealed" the apple sauce containers when freezing, but you answered my question. This will work perfectly for us this week as I prepare one-dish freezer meals to take to my in-laws (they live out in the middle of nowhere) to keep us fed after my MIL's knee replacement surgery. I'm using aluminum foil containers (I'll wash and re-use them, don't worry), but the plastic lids would take up way too much space in my freezer. Problem solved.

Hi Wendy! I truly enjoy your cooking hacks. Just wanted to share an idea I had for keeping plastic lids from picking up strong odors or colors, like the peppers. I cut a square of parchment paper ( cereal bag would also work) to line my lids. Make it oversized so that the edges are fully shielded. My husband likes spicy pearl onions and it is impossible to get the odor out but this paper seals the jar very well.

This is great! Better than some of the repeat brands and rice recipes I’ve seen on other frugal eating videos. I love Chipotle! But it can be costly. So I only go once every 6 to 8 months. I’m gonna try this. Thank you.

When you soak beans and rinse it helps with the gas. Kidney beans must be soaked and pre cooked for a few minutes at a boil before hand. Has a chemical not good for you unless you cook and soak at least one hour. Pinto work well without soaking, without to much gas.

I’ve never considered taking the seeds out of the can’t peppers. Great idea. Also another good reason to wash rice: I’ve read that washing the rice removes most of the arsenic.

Though Chipotle is a new thing to me, watching your video, makes it something am pretty sure my family would really like...thank you for sharing, with us all. Also, the suggestions for preparing rice, we really enjoy rice with our meals, but is something, I struggle to cook, but my husband and son, don't complain. Please, would like to ask you, if you use a particular label maker for your spice jars, they look so nice, and since I reuse the glass ones when I can, your labels would look more uniform, adhered to the reused bottles. I'm sure you hold your own on the rice front, Gretchen! For the labels I make them with a printer and tape. This is the video outlining the general process: kzbin.info/www/bejne/gmrbZHxqfrplpKs. For making the ones for the spice jar, I used Word to make sure the labels were the right width. Good luck and if there is anything I can clarify for you let me know!

Wendy, Thank you so, for sharing how you make your labels...am so happy, to know this! Though am not computer savvy, know our son, can help with this, and also, thank you for sharing the labels you have made. Have learned so much from you, would like share a quick fruit salad recipe, and hope you and yours enjoy it. Pop into your refrigerator, to till contents are cold, a can of cherry pie filling and a can of crushed pineapple. In a mixing bowl, with a spatula, place thick pie filling into bowl, then carefully pour approx. half the can of crushed pineapple (with it's juice)into the pie filling can (so you get all it's contents out, by stirring with your spatula), repeat with remaining can contents, and gently mix, till well blended. Add approx. half a bag of miniature marshmallows and approx. 6 sliced bananas, and mix till all is well coated...keep refrigerated till ready to serve. Also, is a big hit, at family get - togethers and such. If am serving it at home, in small bowls, will not mix in the bananas when making the salad, but will slice a banana, on top of individual servings. God Bless. Gretchen B. :)

Here in New Zealand, that single lime used to decorate would blow the budget. They cost over a $1each!

The only thing I wouldn’t freeze or use can would be beans . After 3 days of being cooked they turn into glucose aka sugar . Look it up .

Thank you! I don’t normally freeze beans. They’re usually so quick to make up and it’s rare that one pot will last us more than 3 days these days 😂

can't find peroana beans any where in Pennsylvania. is it the same as cannellini beans?

No, the peruano beans are not the same as cannellini. The ones I use also go by "mayocoba" or "canary". If you cannot find them, pinto beans are very similar. Good luck!

Tried making the guacamole froze it and then left it in fridge to thaw out during the day and while it tasted fine it turned that awful color what did I do wrong ? Do you have to take it from freezer to table ?

The plastic to cover and use of lime juice could help it to not brown.

I'm thinking it could be the covering. I notice that if there are ANY air pockets on the top covering, the browning will happen quickly.

the reason for soaking beans is because all beans have an ingredient that makes it imposible for the human body to digest and use the vitamins and minerals in the bean, when soaked that ingredient is removed. Do your family a favor and soak the beans. Your family may not notice any change in their body now from eating beans that have not been soaked but dowb=n the line they will pay for you not doing it.

You MUST soak beans then throw away the soak water! Its not to reduce cooking time, but to reduce phytic acid, a toxic phyto chemical that is anti-nutrient. Eating unsoaked beans prevents your gut properly absorbing iron and zinc. Which at the least shows in peoples hair and skin, but leads to other serious health problems. Please look this up as you are influencing alot of people. From your first video I guessed you were a vegan or vegetarian who eats unsoaked beans because of your thinning hairline and prematurely aged skin. Also, eating unsoaked beans creates lots of intestinal smelly gas. I have had many vegan and vegetarian room mates and they all smelt really bad and had bad hair and skin! My skin has never been clearer, and my hair literally grows long enough to touch my thighs as a vegan. There are folks who eat plant based and don't wear sunscreen, this likely is the cause of their skin aging prematurely. I also like to make beans using the instant pot.
