📋 INGREDIENTS (for 4 servings):
For the Rösti:
• 200 g (1 cup) red lentils
• 4 large potatoes, grated (about 800 g or 1 ¾ pounds)
• 1 small onion, finely chopped (about 50 g or ¼ cup)
• 2 tablespoons cornstarch or chickpea flour
• 1 teaspoon paprika powder, sweet
• 1/2 teaspoon cumin, ground
• Salt and pepper to taste
• Vegetable oil for frying
For the herb dip:
• 200 g (¾ cup) plant-based yogurt (e.g. soy or almond)
• 1 clove of garlic
• 3 tablespoons fresh herbs (e.g. parsley, dill or chives), finely chopped
• 1 teaspoon lemon juice
• Salt and pepper to taste
