Easy Idli recipe without onion garlic

South Indian Idli recipes
3 Types of Idli
1) Idli Batter ingredients :
Urad Dal : 1/2 cup
Methi / Fenugreek seeds - 1/4 tsp
Water - 1 cup
Rice / Sona masoori rice - 2 cups
Water - 2 cups (To soak)
Water - 1/4 cup (Add while grinding rice)
Thin poha - 1/4 cup
Water - 1/4 cup (Add while grinding Urad dal mixture)
Fermented Dosa Batter - Half quantity (Use in batches)
Salt - 1/2 tsp (As per taste)
Add water if required
2) Soft idli & chutney :
Dosa battter - 3 Laddle ladle
Water - 1/4 Cup (Adjust consistency)
Salt - 1/2 Tsp
Baking Soda - 1/4 Tsp
Lime juice - few drops
Chutney ingredients :
Coconut chunks - 100 grams (3/4 cup)
Green chilli - 2 no’s
ginger - 2 inch
Tamarind - 1 Tsp
Roasted channa - 2 tbsp
Coriander - handful
Salt - 1/2 Tsp
Water - 1/2 cup
Oil - 2 Tbsp
Urad dal - 1/4 Tsp
Mustard seeds - 1/2 Tsp
Curry leaves - 3 or 4
Red chilli - 1 no
3) Spot Idli recipe ingredients :
Butter - 2 cubes
Chopped tomato - 2 tbsp
Green capsicum - 2 tbsp
Chopped coriander - 1 tbsp
Salt - 1/4 Tsp
Red chilli powder - 1/2 Tsp
Black pepper powder - 1/8 Tsp
Homemade pav bhaji masala - 1/4 Tsp

Prepared idli batter - pour as per requirement
Chopped coriander
Gun / Podi powder - as per taste

Butter cube - as per requirement
4) Thatte Idli recipe ingredients :
Dosa battter - 3 Laddle ladle
Water - 1/2 Cup (Adjust consistency)
Salt - 1/2 Tsp
Baking Soda - 1/4 Tsp

Ghee - as per taste

The key secret one ingredient that ferments the Dosa batter perfectly in cold regions is "POHA". So as titled, we mean Poha as that one ingredient.

Hie! We do add little bit of Baking soda to achieve a softer and fluffier texture. It’s completely optional. 😊

You are doing a great job for the society❤️ I was a hard core non vegetarian till I visited a farm and witnessed the horror of the dairy industry. The cow is inseminated painfully every 6 months so that calf is born. The calves are taken away immediately without a single drop of milk. The male calves are transported to the slaughterhouse to be killed on the very day. This process continues for some years till the cow is completely exhausted and later sold for meat. That’s the milk we consume. I literally had sleepless nights after watching the cows, their udders become so big they can’t even move. And they run to save their babies from going to the slaughterhouse. Thank you for these recepies so that people can choose compassion in their plate instead of pain.

Hi! You may use lentils like mung dal (green gram), masoor dal (red lentils), or chana dal (split chickpeas) instead of urad dal. Other substitutes are Oats, quinoa, black eye peas or Sago pearls. Hope this helps. 😇👍🏻

Baking soda is not always bad. As long it use in correct quantity nothing is harm.

Instead of soda can use cooked rice in batter it will ferment very fast.

Hi good video . The idly looks rubbery but not spongy. Not the right texture I feel . It is ground in a Grinder . If you are using mixer the. Add ice cubes,if the batter becomes hot idly won’t be spongy . Also no need to add soda and lemon juice .

Thankyou for sharing the recipe, I tried the recipe but the idlis didn't puff or felt that soft, it was very heavy to eat, what could I have done wrong ? And how do we know if the batter has fermented fully, does it need to double up? And it felt the batter had tini tiny particles after grinding rice just felt while touching with fingers couldn't find or look at it, just the texture.

Never ferment ur batter in an aluminium container bcoz it releases some chemicals which is not good for ur health ...steel is best for fermentation or you can even use a plastic container

Mam batter 8 hour ke bad khata hojatihe.hame bilkul v pasand nehi. Khata honese kese idli batter ko roka jaye plz bataiye.

Hi! Aap ye idli batter ko chav me rakh sakte ho. Jyada dhoop k karan khatta ho jata h. Or Garmi ki season me 5 - 6 hours me ferment ho jayega.

Neither soda nor nimbu in the batter. For idli the ground rice should be coarse n urad dal grinding with ver little water. Use hand to mix them.

@deekshaladhwani9119 Please note : When you use a measuring cup, it’s measurement in liquid will be 250 ml and when you use rice or grains , it’s measurement will be approx 180 grams.
