1 ingredient can make unbelievable fermented dosa batter at home
Perfect Fermented Dosa batter
Easy Dosa recipe without onion garlic

South Indian Dosa recipes
3 Types of Dosa
1) Dosa Batter ingredients :
Urad Dal : 1/2 cup
Methi / Fenugreek seeds - 1/4 tsp
Water - 1 cup
Rice / Sona masoori rice - 2 cups
Water - 2 cups (To soak)
Water - 1/4 cup (Add while grinding rice)
Thin poha - 1/4 cup
Water - 1/4 cup (Add while grinding Urad dal mixture)
Fermented Dosa Batter - Half quantity (Use in batches)
Salt - 1/2 tsp (As per taste)
Sugar - 1/2 tsp (optional)
Add water if required
2) Corn Cheese Dosa :
Dosa battter - full ladle
Oil - 1 tbsp (As per requirement)
Boiled Sweet corn - 3 Tbsp (Add as per taste)
Sprinkle Oregano - As per taste
Sprinkle Mixed Herbs - As per taste
Sprinkle Chaat masala - As per taste
Butter cube - 1 medium size
Grated Cheddar and Mozzarella cheese - As per taste
3) Jinni Dosa
Dosa batter - 1 ladle
Butter Cubes - as per requirement
Schezwan Sauce - 1 Tsp

Tomato Ketchup - 1 Tsp

Grated Carrot - As per requirement
Grated Beetroot - As per requirement
Chopped Green Capsicums - As per requirement
Chopped Red Capsicums - As per requirement
Chopped Coriander - As per requirement
Pav Bhaji Masala - 1/4 Tsp (As per requirement)

4) Mysore Masala Dosa
A) Aloo / Alu bhaji Ingredients :
Oil - 2 Tbsp
Cumin Seeds - 1/2 Tsp
Chopped Green chilli - 2 medium size
Curry Leaves - 3 or 4
Turmeric powder - 1/4 tsp
Boiled Potato / aloo - 2 medium size
Salt / Sendha Namak- 1/2 tsp
Sugar - 2 Tsp
Lime juice - 1 Tbsp
Coriander leaves - 2 tbsp
B) Butter Cubes - As per requirement
Schezwan Sauce - 1 Tsp

The key secret one ingredient that ferments the Dosa batter perfectly in cold regions is “POHA”. So as titled, we mean Poha as that one ingredient. 😇👍🏻

As far as my knowledge goes the secret ingredient is Methi / Fenugreek seeds grinded with urad daal and rice makes the fermentation process fast.

I live in Melbourne..and I always add poha to my idli and dosa batter..still it takes more than 24 hrs to ferment the batter.. U can add poha for soft idli and dosa also soak poha for atleast 30 mins before grinding

I live in Boston so it takes 24 hrs to ferment. Add salt after grinding and keep the batter in the oven with oven lights on. That’s the key

Yogurt menu in Instant pot is the best option for faster fermentation. It is a boon in cold countries

Keep the bowl of dosa batter in a warm condition. It ferments well.

You can also add a handful of cooked rice also soaked with the normal rice. Or some people add sago with rice before soaking.

Wow Super and Delicious 😋!!. Only suggestion maybe to use cast iron pan as the teflon pans are bit risky to health once teflon layer starts coming out.🙂

Hie! Thank you for comment 😊 Yes, we can use Cast iron pan for Dosa. However, we have Induction in kitchen so can’t use it. You can make dosa on it, if you have.

What other rice can you use if no sona masoori rice is available. We get only Basmati rice and long grain rice. Parboiled rice is not even sold anymore. Thanks.

Hie! You may use Ponni rice or regular raw rice, such as short-grain white rice as a substitute. If you can't find any of the above options then you can use Basmati rice. However, keep in mind that the texture and flavor may differ slightly from idli rice, so the results may not be as authentic.

Hello 😊 1 ingredient that is unique to make get perfect fermentation even in cold regions is Phoa (Flattened Rice flakes). Other ingredients are default ingredients to make Idli/Dosa batter.. 👍🏻

She means one additional ingredient 'poha' (flattened rice) which helps in fermentation.The other 2 ingredients are essential while making idli/dosa

Poha is the "one ingredient". However Poha is known to give a softer texture. To ferment you need a warm temperature continuously for 8 -10 hours.
