In Bangladesh, we grow the high quality of seasme recently, because of high demand from Japan and Korea, even competing who will get first. Nowadays Bangladeshi people do not eat or cook with sesame oil(til oil is called). They eat nasty Palm, Soyabin, and mustard oil(very popular in Bangladeshi Cuisine). Here in Canada, we can buy avocado oil and Olive oil, which I prefer, but you can buy any oil produced in the world.

Thank you for the recipe ma'am. I'm not indian but my father used to study for years at india so he really love indian food especially dosa and idli. I dont have that specific rice so i only use normal rice and read that i have to add some cooked rice if using normal rice. My dosa came out great and now we dont have to go out to indian restaurant anymore🙏

Hi Aunty, this is exactly how my mom taught me to make one batter for four breakfast dishes. There's one tip she gave for softer idlis, you can add soaked poha and grind the batter. I enjoyed your video. I made the idli dosa batter. I used 2 cups idli rice, 1 cup yellow mung dhal and 1 cup urad dhal, 1 teaspoon Mehdi seeds and a little cooked rice. I followed your tips. The batter was well fermented in the morning. So far I have made idli, dosa and dohkla. The idli’s were soft and spongy.

Your way of mixing salt in the batter reminded me of my Mom 😍 On an unrelated note, I also want to thank you for your tip to store drumstick...I now store them cut in an airtight glass container in the fridge & they stay fresh for many days. Dear Gita Ma'am, This batter recipe is awesome. I have used it twice over last week. First time i made a mistake and used it before it was fermented. Next time I let it ferment well using your tip of adding salt later. Right from the first to the last dosa, they were perfect and came off easily on my regular iron tawa. Thank you for sharing it.

I make the batter in the same manner. Additional tips... You can make this mixture of boiled rice, udid dal, methi in the same proportion in a large quantity and store it in a box. While making, just pour some quantity in a mixer, wash it well, soak in enough water. So soak it in a mixer, grind and store in the mixer itself for small quantities If you add a handful of cooked rice while grinding, it ferments better. Soak for 5 hours and keep the mixer in the fridge for half an hour before grinding. This way, the mixer won't get heated while grinding. Grind into a smooth paste and stir it up well with your hands. Close and keep it aside on a plate. In cold weather, you can keep it inside an oven or microwave. Always cover the dosa for 2 minutes for the first few dosas. It comes out well. Also very, very lightly oil the tava and heat it till it smokes a bit. Put off the stove and after 3 minutes, put on the stove and heat well and make dosas. Cover it for a minute and then open and cook.
