I know it's not a lot for one potato, but I was brought up to eat the skin of the potato too, since that's where most of the nutrients of the plant are. Just be sure to scrub off the dirt well!

I have been wanting to try and eat more healthily again even though I am having mental health/energy struggles, and I love that you consider things such as not using every pan in the kitchen! Even though your content presents as about weight loss, it also has some of the best tips for making nutritious food in general, easily and with the least amount of waste… and that that is very helpful even if some of the ingredients are harder to find where I live. Though with the seasonable vegetables it feels in the right spirit to make swaps for what is in season here. (I hope to manage to grow some shiso myself one day as it is not sold here, and maybe I can learn to make kiriboshi daikon next time I buy daikon). Thank you so much for your videos. You spoke about having rice or potato while showing the tori & imo dish, would you usually have that with rice or just keep to the potato already in the dish?
