My Dad and his Dad made grape jam once a year. They used black Isabella grapes that I have not seen for many years now and it was so good. They could both grow anything. The only other time you would find my dad in the kitchen was when Mum would ask for one of his sponge cakes. She could never get hers to be as high or light as his. Until she discovered he used a dozen eggs in his.😂

You could make some lemon drizzle cakes with some of the lemons. My raspberry bushes all died one year for no reason at all so yes, they aren't as tough as they say. My mother & grandmother made jams & never water bathed them & they lasted okay for years if they got lost in the cupboards but mostly they were so delicious they never lasted more than a year. My grandmother was English & came out to Australia as a teenager in the late 1800s & was a fabulous cook & only had a fuel stove.

I don't cook from recipes but just so I knew how, my grandmother had me follow the old Betty Crocker Cookbook "Filled Cookies" and use her oldest jams when I was little. Back then, she used Gulf Wax to seal the tops. I still use the filled cookies recipe if there's an old jar but my jars never get as old as hers did because she'd can up dozens and dozens. The cookie recipe isn't too sweet but is much like a Pop Tart that makes a great grab and go breakfast or snack.

I am from NZ too. For fruit and tomatoes we (our family) have always used the over flow method where you pour the boiling liquid into the jars right to the top and put the lid straight on. They seal perfectly and last for years. I have had no issues with this method and it is so much easier than water bathing etc. I reuse jars from the supermarkets and their lids seal time after time. I find that I dont even need to warm the jars. I just put the boiling liquid in the jars and put on the lid. They never seem to crack. Really enjoy watching your channel. I have learned so much!

I always say when I give homemade jars or bottled goods … if the lid doesn’t pop the first time you open it don’t use it … also use your nose and eyes cause if it smells bad it probably isn’t worth the risk … I will also be using the Stacey method moving forward, wibble the middle of the lid for the wibble wobble sound 👨🍳😜😂🤣

Hi a tip that could save Christmas. My father was a butcher and was aware that every year there is a small number of Turkeys or other joints of meat that are off. So to avoid a ruined Christmas check it on Christmas eve and if you have a problem go to your freezer that has one or two chickens that are small enough to defrost overnight (even a large chicken can defrost overnight). In England I'd put the chicken in the sink of a cold laundry room overnight, not the fridge. Down under maybe a cool box with ice blocks. Has to be below 5degrees for safety, but fridge could be too cold for overnight defrost. THIS STRATEGY ALSO PROTECTS AGAINST HOME DELIVERY FAILURES. I'm sure all will be well and you can defrost and eat your frozen chickens in January.

My mother always preserved pure fruit in a water bath, but same as you I don't water bath jams and preserves because of the natural preservatives they contain. If I make (for example) Jamie Oliver's lower sugar jams and chutneys etc. then they need to be stored in the fridge rather than on the shelf.

I grew up with home made jams and preserves. They were never water bath canned I can remember taking off the “skin” on the jam. It was a bit crusty and often had mould on it. Underneath the skin, the jam was perfect. My kids are horrified that that’s what we did (still do). Still alive!😂

I came across a recipe for dairy and egg free lemon curd which I've tweaked to suit my own tastes if you're interested in it. The texture isnt the same smoothness as normal lemon curd but after it's sat in the jars for a few days, it still has that same awesome lemon tang and I just love having it on toast or adding it to my homemade greek yogurt. So good!!!

This year I made Rosella Jam, and a Rosella syrup, that I can use as a cordial by adding sparkling mineral water or as a ice-cream topping. I only had one tree but hopefully next year I will have more.

@@glenelle24 Hello Glenelle, good luck with your Rosellas. Keep an eye out for mealy bug on your plants...I had an infestation when the shrub was just starting to fruit, but I used a homemade organic mealy bug spray and that cleared them up . I found them mostly on the forming flower buds. I also picked my fruits regularly and kept them unwashed in a Ziplock bag with a paper towel till I had enough to use to make jam. When you make the jam peel the red calyxes from the pods use gloves as sometimes the calyxes/pods have fine hairs. To make the jam I basically followed a similar method to Stacey's Raspberry jam, but boiled the seed pods first , just covered with a bit of water and boiled for about 20 mins or so. Strained the liquid from the pods and then I added the calyxes to the strained liquid and boiled again till the calyxes were tender and starting to fall apart. I then allowed the mixture to cool a bit and measured the amount back into a saucepan. I added an equal quantity of sugar to the calyxes and a good squeeze of lemon juice and returned the mix to the heat to boil for about 10 to 20 mins till the jam begins to thicken. I then put it into hot sterilized jars and seal immediately. Remember to clean the rim of the jar to get a good seal. The lids will pop as the jam cools and create a vacuum seal. Remember to label them and keep in a cool dark place till you want to use them. As Stacey said you won't need to waterbath the jam and I don't keep mine in the fridge either as the high sugar content helps in the preservation. You can also freeze the calyxes, I found one packet a couple of weeks ago and made a rosella syrup, that I can use on Ice-cream, or as a cordial with sparkling mineral water added to make a refreshing drink or to swirl in a cheesecake. (I adapted a blueberry cordial recipe from the Woman's Weekly Fruit and Vegetable cookbook) When I have my next plants fruiting I am thinking if picking some of the small fruits and preserving them in syrup as well as making a rosella tea . The leaves are also edible. Oh I almost forgot ... pierce the seedpods BEFORE boiling as that will help to release more of the pectin that will help set the jam. Enjoy!

I've kept up the organic fertilizer and we've had sooooo much rain through Nov Dec (49mm in the last 24hours alone!) Off to google mealy bug as I've no idea what to look for lol. Thank you again, my sweet Nanna, long since passed loved rosella jam (& weirdly tomato jam!!!).

@@glenelle24 You must live in southeast Qld🙃sounds like our weather this year. My Nanna made all her own jams including rosella jam, pickles and sauces and kept them in her bathroom cupboard . We are all big fans in our family. Mealy bugs are a white "furry" small sucking insect. You will find them under the leaves and on the flower buds. I made a dishwash, oil and water spray to control them. There are natural sprays online that you can make up to control them.

I’m so disappointed, I bought a bag of lemons at Costco when I went with a friend as I don’t have a membership, I put them in a basket thinking they would keep for a bit. I went to get them and there were moldy ones in the bottom, I salvaged one lemon out of the whole bag ! $10.00 down the drain and no lemon curd 😢 I live in northern Minnesota and lemons are expensive here. I don’t need to grocery shop very often but am keep my eye out for a sale on lemons at the local grocery store. I hardly ever use my Thermomix anymore because so much of my cooking is from scratch for videos. I am actually considering selling it. I love the machine but I can't make videos using it :-(

I blew up my Thermomix after 1 year and bought a "cheapomix" (Mistral) for $100 off marketplace. It's been in use for 4 years, still going strong.
