Hi, I have tried your recipe and the bread was awesome! Now, I want to add some wholemeal flour to make it healthy. Do you recommend I add it into the poolish or the main dough ? And how much to add ?

You may follow the recipe of walnut raisin bread directly which contains whole wheat flour.

I saw your the other video using whole wheat flour but i prefer this method of adding the overnight poolish to the dough flour. Can i use the receipe with whole wheat flour but using this receipe where you do not need to knead n keep the bread dough overnight in fridge?

That bread has biga which is similar actually. They are two different types of pre-ferment but does the same good thing.
