There are a few people in the comments criticizing the doneness of the steak and the cooking method that was used. As an Asian-American person and chef, I'd like to give some perspective. I want to note that in many East Asian cultures, meat is generally eaten a little more well-done than in the West. Most asian cooking methods (like the one shown in the video) reflect this and often involve cutting up the beef into smaller pieces either before or during cooking. Serving a whole steak intact may be traditional in some western countries, but people in many east asian cultures prefer to have the meat cut into smaller pieces and cooked in front of them. If you ever go to a Korean or Japanese barbecue place you can see this for yourself. Also, from my eating and cooking experience, it's often necessary for Kobe and other types of highly-marbled Japanese beef to be cooked to a greater doneness due to the high fat content. Animal fat takes longer to cook than the flesh it's attached to, so if you cook a Kobe steak to rare or medium rare the meat will still be rather squishy and taste oily. Even in that Gordon Ramsay steak video, you can see him cooking the fat on the steak slightly longer since it takes longer to cook than the rest of the meat. At the end of the day though, eat your meat however you want. It's your money.

Also, the reason why western steaks are not cooked to well done is because it becomes tough and difficult to eat. With marbling like that....it's not gonna be a problem.

Having tried it in Japan I decided to buy it and make it my own way. From my own point of view the best way I have enjoyed it is precut in stripes of about 150 grams (that makes about 1 finger thickness and 2 finger large by the lenght of the steak. Then cooked on a low to medium fire with just a sprinkle of salt and sesame, no more than 3 minutes per side. Near Kyoto I have tried it with a kind of heavy sauce a bit like gravy but I disagree with that completely. This meat is godlike and any kind of addition is only detrimental. If I had enough people to feed I'd try to buy a whole fillet and cook it at low temperature in the oven, whole, after having seared it to a seal.

Travel Thirsty is much more "To the point!" I like it better than the other channels which have hosts and guides speakig throughout the edition. This allows us to think for ourselves and watch as if we were sitting in those seats. Not only is the POV amazing. But the elegance of the camera handling is gives us a feel of inside that persons brain! 4.5 Stars in my book!

So people are commenting on the price: The reason why this is so expensive is because Kobe must have requirements it fulfills before it's considered 'kobe beef'. It's also good to keep in mind that most american stores selling their beef as 'kobe beef' are lying to you. These cattle are Tajima cattle and must be raised in the Hyogo prefecture and it must be processed at particular places. They're brushed, they're grain fed and there's actually so little of this stuff that you can track each and every single cow or bull or calf through all the stages of their life cycle with a number... So for those of you eating outside of Japan and 'kobe beef' catches your eye. 9/10 times it's not... there are only 9 restaurants in the US that serve REAL authentic Kobe beef.
@X1GenKaneShiroX7 жыл бұрын
Wolfcchi Even though if there is Fake Kobe Beef then the Fake Kobe Beef must taste good if not amazing. It should have fats in it as well
@carlywang31367 жыл бұрын
Oddly enough, if you were to have real Kobe and the stuff they market as fake and taste test them blind side by side, you'd be able to pick out the Kobe immediately. There is THAT much of a difference.

There are 2 easy ways to know if its real Kobe Beef or not, when a restaurant sells real Kobe Beef they get a certification of the cow (and all the data about the cow). Secondly a restaurant that sells real Kobe gets a golden trophy. Just google "kobe beef trophy" and you will know how it looks like. So if you ever happen to be in a restaurant thats sells Kobe Beef and doesnt own these 2 things you will know its fake.
Most of the Japanese comments are criticizing this cook. Because the iron plate is dirty, and the steak is arranged on the glass dish.
