If I ordered an old fashioned and the bartender offered me a drink like that, I would refuse to pay for it. In no recipe ever has soda water been and ingredient in an old fashioned, that's like adding Sprite to a martini. Also, Negroni is the kind of drink that benefits from proper dilution. With that short amount of stirring it will taste like crap. Please gentlemen, watch and take this video as an example of how not to make a classic cocktail.

He did use bitters in that Old Fashioned right in the beginning. I know that some bartenders put few drops of soda water on top of the sugar cube to help the sugar to dissolve. Some people, I for one, use simple suryp, which is exactly the same thing, except the dissolving of the sugar has been done in advance. But you don't pour 10 liters of club soda from a bottle like that. It just makes an overly diluted drink that's not cold enough. Also using just one big ball of ice doesn't help. More dilution from the ice = colder drink. The bigger the ice the slower it melts and thus the longer it takes to chill the drink. So in order to make the drink cold enough he would have to stir it longer, so adding a shitload of soda water to overly dilute the drink right from the get go does nothing good.

most use simple syrup ive bartended for 10 plus years and have never seen any one use soda water, you dont want to add carbonation to this drink for one, and two that would dilute the flavor . also pouring the bitters directly onto the sugar cube or some people put the orange in early helps break it down. i muddle my sugar with the orange , cus I think it brings out a lil more of the acid and you get more of that flavor .

I know Campari's sacred to the negroni, but you guys should give it a shot with Cynar 70 (proof variation) instead. It packs a punch.

C'mon man that old fashion was OK, a little club soda is fine, also with the muddling, the whisky and the stiring, bubbles are probably gone for that small amount of soda water anyway. Talking about the negroni, he put the negroni on ice so is not necessary even to stir the cocktail, you can choose your preper point of dilution, IF he would serve that negroni Up then and just then I will agree with you.

A tiny bit of club soda actually really helps dissolve the sugar cube further and won't add any noticeable carbonation to the drink. However he used way too much soda and way too little bitters.

1:01.. He most definitely said "square". In this situation, the bartender was using square ice cubes. Contextually, there was nothing that would relate to a sphere here. Nice try at being an ass though.

To make a Hemingway daiquiri you add grapefruit juice and maraschino liquor. Very tasty drink on a sunny day!

I think the fizz in the club soda is only used for dissolving the sugar and released into the air in the process, so I doubt the final drink has much, if any, fizz in it.

Campari tastes really special , not something most people like the first time... so don't feel "sissy" if you don't like the Negroni. it's an acquired taste .

To add to PIZZLEdeTWIZZLE’s explanation, Campari is an herb liqueur. It has a sweet, herbal flavor to it. Campari and Tonic is the best start for beginners.

I chuckled when he said that every bartender loves the Negroni. I've been to one bar that when I asked for one didn't go, "huh what's that." Then when I explain the ingredients no bar seems to have Campari. Needless to say I have to be picky with the bars I go to.

I've always found adding a splash of water (never club soda) before the bitters helps the sugar cube to dissolve more easily.

It’s actually fairly common in bars to put a touch of club soda to help break down the sugar cube so it can become almost like a simple syrup and help just add a touch of sweetness. If you don’t, what you’ll have is all the sugar just sitting at the bottom.

Never had an old fashioned that way. The one I had was made with Bourbon whiskey, peach bitters and brown sugar simple syrup. It was served in a sealed bottle with cherry wood smoke. The bartender described it as a new take on and old fashioned.

Yeah, that's pretty heavily modified. The most simple form (Which I kinda consider the "true" way) of an old fashioned is just a sugar cube muddled in the glass 2 oz whisky (rye or bourbon), some angostura bitters, and an orange peel for garnish. I tried it without the orange once and was pretty taken aback by how much worse it made the drink. It's weird that something so small could make such a huge difference. Anyway, cheers!

There are many different ways of making an old fashioned. I like to start with a slice of orange and a maraschino cherry, muddle them up with the bitters, add ice, pour bourbon over (or rye, but bourbon is much sweeter, and I like a sweet old fashioned), and finally add simple syrup. I would never add soda to an old fashioned, but that's just me.

Earnest Hemingway was actually a diabetic. His version of the daquri included grapefruit juice and maraschino liqueur in place of the simple syrup. (sugar)

i love old fashioned, my favourite cocktail! But i love it too when i make it "Don Draper style" but then only difference is from orange slice, cocktail cherry and TONIC water... not with club soda...

For daiquiris the way Hemingway is supposed to have proffered them, add a bit of grapefruit juice and maraschino (cherry) liqueur, good stuff. Also, it goes without saying, how do you just add soda to an old fashioned? The name literally implies an unchanged recipe

There are three cocktails I make routinely: 1. Bourbon on the rocks. 2. Scotch on the rocks. 3. Irish whiskey on the rocks. No soda or fruit juice in this man's (myself) drinks.

@@polak.7144 I have a cocktail book published in the 1890's, and in the recipe for an Old Fashioned it quite clearly says, " add a small splash of soda to the sugar and bitters to help the sugar dissolve." If that's "new age shit," so is the United States!

Thomas O`Hare Just a note(no offense). Citrus(especially lemon and lime) is an essential ingredient for cocktails. I think they are talking about other fruit, unless said fruit is used as a garnish.

A friend's advice: try the "sbagliato" or "negroni sbagliato". In practice it is the same but puts the sparkling wine in place of the gin. Very good and lighter. Trust me ;)

Working in a bar for 2years as first job, a old fashioned with club soda? They had to be pretty drunk already to put it in such an iconic mix, also where do you get spherical ice mounds, and the guy goes with a specialized shop for mixologists has he ever heard of eBay or Amazon.

I reccomend Negroni with only 3/4 oz. Campari, or possibly just stir the Campari over ice by itself to dilute, before pouring in. The flavour is so powerful I feel it becomes a little too much.

A professional bartender knows by rule that the ice cubes should never be touched with the hand, I have seen the same mistake so many times in youtube, there's no justification.

Regarding the Old Fashioned, if it's good enough for David Wondrich and Esquire it's good enough for me, and for most of the high-end cocktail bars I've been to. Furthermore, if you feel that the use of one's hands in the process of making your food or drink is unsanitary do not ever, ever go to another restaurant or bar again. Ever. The original old fashioned had a splash of club soda. Only enough to dissolve the bitter soaked sugar cube because sugar doesn't dissolve in alcohol. He added WAAAAY too much as if it were an actual ingredient. It's just a mixing agent! By the mad men era, it was omitted almost completely. If you order one, you can ask the bartender not to melt the sugar with club soda as a precaution, though it's not typical anymore anyway.

It's interesting that everyone is saying that club soda doesn't belong in an Old Fashioned. The sad part is the recipe at my job calls for club soda. I just started bartending 3 months ago and no lie, earlier this week I was asked to make one for someone and I looked at the book we have and made it. I felt something was off so I have been looking for videos of others making it on KZbin and saw this version (which in one video someone called it the "modern" Old Fashioned) and the one where others don't put club soda. Now I know not to put club soda in it. You think this is blasphemy, the recipe at my job's book calls for cherries in it as well. XP

For everyone getting mad over the club soda in the old fashioned, that’s actually a more modern way of creating the classic, he did execute it incorrectly, you’re supposed to splash half a bar spoon of it over the ice. It’s purpose isn’t to fizz up the drink but to allow that small amount of CO2 to help the bitter and sugar dissolve into each other, with half a bar spoon by the time you are done stirring the fizz would be gone. I understand the hatred for club soda but it isn’t an ingredient here but simply a bonding agent.

Angora bitters can be replaced by rum? (you said or Rum)... Bitters are not easily accessible where I stay.... Also What can be replacement for vermouth

Nothing can really replace Vermouth. There are many different kinds, but they all have fairly distinct and powerful flavours (especially the sweet red vermouths. The dry whites are much more neutral). All OK liqour stores will carry some types of Vermouth (if desperate, buy the Martini-label. They wont yield great results in classic cocktails, but they're the most widely available).

1. I wouldn't try to substitute or make your own at home, really good cocktails are like baking, it needs to be right. Also, where do you live? Ordering club soda in an old fashioned is like a guy walking into a womens restroom. You can do it but everyone in there is gunna want you out.

Count Negroni didn't invent anything xD he just replaced Soda in the Americano with Gin, and Americano was already a Milano-Torino with a soda splash... Milano-Torino (Milan-Turin duh) because Bitter (Campari in particular) was (and it still is) from Milan and Vermouth from Turin (but Carpano was the first Vermouth even tho now people mostly use Martini, but yeah Punt e Mes which he's using is actually Carpano). So the Count Negroni didn't really invent a cocktail straight up xD it's more of a twist or a variation, but certainly a very good one and nowadays people mostly drink that rather than Americano or other similar cocktails, unless they have to drive. Negroni indeed tastes amazing and it's a very good aperitif, the problem is that it's all booze :D aside from some ice dilution it's a glass of booze and after a couple everyone is already tipsy at least :) Americano surely is lighter, I don't like it tbh because I really like Gin and how it interacts with Vermouth and Bitter and I don't like the Sbagliato either (sbagliato = wrong... so it's like a Wrong Negroni, because there's Prosecco instead of Gin).
