Hello and welcome back to my channel. Today's video is slightly different.
I have been really enjoying the Pinch of Nom recipes recently so I thought I would share 3 we have been enjoying. They are great, reasonably healthy, low calorie meals that taste delicious. Would love to know your favourites if you have any in the comments....

I'm Katie, I live in the UK with my husband Jon and our 3 children aged 11, 8 and 5. I love photography, videography, generally being creative, and being outside whenever I can. We also love to travel, the last couple of years have obviously put a stop to that a little, but we are hoping to travel lots more in the future. I've been online for nearly 11 years, which is just crazy, and I am really proud of the lovely community I have built up on here and Instagram.

I love food videos, I think we all lack inspiration at times. I haven’t seen the cookbooks either. I completely relate to feeling it’s time to make changes. I’m trying to make my goals about feeling better and not make numbers my goal (rather a side effect of my efforts). I’m also trying just to do tiny things so it’s not a huge effort and no excuse there’s no time. We’ve done dry Jan which is a good start. Ive exfoliated & moisturised my body nearly everyday which I see as a win. I’ve been writing my gratitude down each day and listening to a podcast each week. I’ve got some hand weights downstairs and do a few arm exercises each day and try and do 5 mins dance/aerobics whilst food is cooking 😆 Since my daughter started secondary school and I no longer doing school run (4 miles a day) my daily step count has dramatically dropped, apart from a few months before Xmas I haven’t done my weekly yoga, Pilates & classes I used to do. Hi Tracey thanks for a lovely comment. Good luck on your health journey too. I am also trying to make my goals more about feeling better than numbers. Physically and mentally. I’ve also been writing in a journal, mine is more of a well-being journal but it has a gratitude section. I think that’s a great idea. I really have just let my physical and mental health slowly get more and more sluggish over the last couple of years. I know it’s a bit of a new year new you cliche but I needed something to kickstart me as I wasn’t ready before, and I’m glad for January and the new year as it’s definitely motivated me, even if it is a cliche. New Years resolutions aren’t my thing, I heard someone say ‘2022 intensions’ which I though sounded better. I find after all the festive food/drink/late nights etc I’m craving routine, organisation and nutritious food etc I’ve got a huge box from Hotel Chocolate & a time of shortbread I’m avoiding opening 😆 I’m trying to prioritise mental health too and think most activities help both mental & physical health (eg sleep, nutrition, movement). Really want to do a bit of meditation but i’m just getting around to it. I have the Calm App so just need to fit it into my day. Staying in a lodge with hot tub at half term so hoping I will get back into reading. Enjoy the rest of your weekend x

Being rushed and/or tired while trying to make healthy food choices is really tough. I’ve found one way to set myself up for success is to batch cook a big batch of a healthy soup and freeze it in individual portions for later. Then, I can just heat it up on the stove or in the microwave, put some salad on the side, and a healthy meal is easier and faster than going through a drive through.

That's such a good idea! I am really trying to batch cook more as it helps me so much when the kids are playing football in the evenings or out at clubs! x

Oh Katie, your description of the trampoline class idea was so funny! I do hope it went well. I am trying to be healthier too but I have huge lapses of kit Kat moments! Oh well! Love this video and love pinch of nom recipes too, though I haven’t tried the comfort food book though. Like you, I’m also trying to take better care of myself, it’s amazing how quickly you feel the benefits. Thanks Katie xx

Thats exactly what I am like too! So really trying to be better with meals and not eating on the go as much, plus drinking lots more water. x

Ah love this. I also started being healthier this year. I've been calorie counting which I didn't like before but I'm finding it quite helpful this time. I've been walking 5-8 miles about 3-4 times a week and then on Monday I gave up all caffeine (almost entirely from diet coke) and started couch to 5k properly. I've lost 4lbs in 6 days, genuinely shocked! But I already feel better for it although I've definitely been grumpy for the diet coke loss haha, haven't been craving it though

I can’t give up Diet Coke, I’ve tried but it’s too much 🤣🤣. That’s great thought, sounds really positive. Walking helps me so much, especially mentally. X

I also need to try some different recipes. We eat the same as the kids which is a nightmare as they’re so fussy. I can definitely see a difference in your skin and hair. Inspiration for me to do something healthy this year.

Thanks Karen our kids are quite fussy too! We try to eat together as much as possible but it’s so hard in the week for us as we have to grab and go a lot. I’ve been batch cooking which has been working for us. I definitely recommend the katsu curry, I’ve made it again since for the kids and they loved it. It’s basically chicken nuggets really 🤣 x

Im in a rut with what to eat and put lots of weight i understand hoe you feel i started drinking lemon warm water every morn on an empty stomache and thats helped me lemons have electrilights in them app so i feel less tired but my skin tone looks better .which recipe was your fave they all looked so nice thank you x

I think out of all of them I preferred the sweet potato chilli but I enjoyed all of them! I try and drink hot lemon water too, I really like it. x
