This looks fantastic. I can get lamb at the Aldi here, no problem. And, I believe it does come from New Zealand. Rump is usually not cut into steak, it is usually a big cut as roast that is mostly cooked in the oven. What you are doing is working for you, so that speaks volumes.

I have put water on a hot stainless pan or pot for decades and they are still in good condition. Only cast iron can be damaged if you plunge a hot pain in water. It is impossible to damage a hot pan by pouring a little water in it. Lamb can be hard to find here. Rump roasts used to be popular.

@@lukesmith3283 It makes no difference if it's supermarket or grass-finished (don't pay the extra for this). I've never had a whole meal of raw meat, I just have a bite or three of whatever I'm about to cook. I'm sure you can go back and forth between both but I'd suggest you start off slow with just a bite of raw ground beef or a bite of raw steak, until you get used to the flavour and texture. Once you decide if you like it you can gradually increase the amount you eat in one sitting.

It's not that the water itself is going to damage the pan. It's that you're putting *_cold_* water in a *_ripping hot_* pan, which has the potential to bend and warp it. It's called thermal shock, and is the same reason a windshield will shatter to smithereens if it's covered in ice and you try to remove it with hot water. What you're doing is called "deglazing the pan," and there's nothing wrong with it in theory, just your practice. Use hot water instead. Far less (little to no) of a thermal shock, and so far less stress on the metal. You can use this deglazing and cook the liquid down to make a gravy to go on your steaks, burger patties, etc.

We get ripped off here in NZ. We pay absolute exorbitant prices for low grade meat in the supermarkets whilst the good quality meat gets exported overseas and sold for dirt cheap. And people buy and waste it which is heartbreaking. Only good way to source meat now is through local butchers, homekill, or friends who work at freezing works. Absolute shame.

I’m in NY and I get lamb from NZ and Australia. My local farmer doesn’t have any meat till January. The lamb was on sale at Costco so I bought 4 leg of lamb. The meat at the grocery stores here isn’t great. Overpriced and below par.

That's awful to hear... I've always questioned, and never liked the overseas meat like that, and I've heard similar things to Quinoa, so I'm not surprised to hear about the meat. People need to start supporting their local farmers, instead of relying on the stores, especially here in the USa, where most people are busy eating fast food and takeout for EVERY meal.

Yes, lamb is available in the American States Rump steak is often found as rump roast (which can be cut into steaks) in America. Your meal selection seems to be a bit more lean than the ideal 1::1 ration of fat to protein!

I would put a small amount of boiling water in the pan to loosen the bits and then pour it over the meat as a gravy. Lots of good flavour there.

Can’t get lamb easily where I live in Nova Scotia Canada. If you want to spend less time cleaning after cooking, switch to a cast Iron pan. The only thing you need to do after cooking is scrape out any burn chunks and then just leave it until you cook the next time (thing sanitizes itself during the heating up / cooking process, and as long as your not cooking on ridiculously high heat, you won’t ruin your ‘pan build up’) Finally, you need to start doing something for those upper traps Max. Heavy shrugs, heavy rack pulls, heavy framers carry, or upright rows.

Even better, the Village Butcher in Oak Bay is just 4 blocks from my house, and they carry all the Parry Bay lamb and Stillmeadow pork (Stillmeadow Farm is beside Parry Bay Sheep Farm). Eggs come from Lockwood Chicken Farm in Cobble Hill, and beef from Tannadice farm in Comox. Virtually everything I eat comes from less than 200 km. Like to see vegans do that!

Stainless steel is fine to add water to while hot, it's cast iron that can warp and damage. Adding some tallow to your butter will help to prevent it from burning, or just use some ghee.

I just used a splatter guard (big particles) for the first time last weekend. It worked great. Even though the smaller ‘spatter’ particles do get through a little bit saved me a massive amount of clean up. It felt safer as well. No hot splatter popping out of the pan onto me. I imagine hot fat popping into the eye would be no fun. Take care.

Here in Oregon we quit buying bacon and switched to belly pork from Costco. No ingredients except pork! Love it with eggs. About not putting cold water in a hot pan, it can warp the bottom of your pan and on a glass top stove you can end up with a spinner where the pan is not perfectly flat any more and will not stay put unless you keep your hand on the handle.

Pans may warp if you put cold water on it when it's hot. If it doesn't happen to your pan you're just lucky or it could be because the amount of water you put on it is small enough to not cool it down fast enough.

For what he (and I) do, you need to only put a small amount on. It immediately starts to boil and removes the browning. To much water and it cools off too quickly, and the water doesn't boil.

In Germany lamb is rare, I usually buy lamb leg at a big supermarket. It’s only about 10 euros per kg. One weighs about 1,5kg, which is perfect for me because I only have one meal a day anyways. Plus it’s from New Zealand where they roam free and eat grass

A quick google search shows stainless steel warps between 500 - 700 celcius, really doubt your pan is getting anywhere near that on the hob, so the cold water is not going to do any damage to it

I think what we call rump steak in Aus/NZ is what Americans call sirloin and tenderloin. What you call round we call topside/silverside and thick flank.

Regarding the rump steak, was watching a bearded butchers video with a friend who used to work at the silver fern meat works in Te Aroha, and when the bearded butchers were cutting the rump section, they were calling it the sirloin. What we call sirloin, they call strip steak or new York strip😂

600g and 15 eggs is a pretty decent amount of food. You might be able to eat more meat if you eat less eggs lol and space the meals out or multiple smaller meals. Cheese usually helps to kick up the appetite a bit

@@jeCktHeReal well to help you understand, let’s go over your current goals. I’ve been lucky enough to follow him for almost a year now. Are you over weight? Currently on medication? Diagnosed with anything serious? If you are over weight, well eating carnivore in time will likely help you adjust your weight. You’re clearing your body with foods that have traditionally and ironically are put out to essentially kill you over time. Your body will utilize the proper proteins and nutrients to slowly but effectively repair cellular damage, since your feeding it what it requires. If you are on medication for things like sugar diabetes, high blood pressure, heart attacks, well removing all the things again that are bad for your body (those cokes, plants, condiments) your body will repair itself. Maybe you have something serious, like a cancer, or a syndrome. Well that is when it gets harder to identify but in general removing most if not all the crap food completely out of your diet and body (potentially even needing Lion Diet) will help you slowly get rid of things that cancer is attracted to, and allow your body to heal over time. It’s not the cure all, but when you remove the things that kill you, your body heals itself. Lastly mixing in water and electrolytes help hydrate your body properly. If your in an active lifestyle well eating 2-3 times a day helps fuel your body. Eating 1 meal a day is fine also. But the biomechanics everyone needs isn’t the same. He’s a professional trainer his food fuels his sessions and keeps him fit. I eat 3 times a day most days but some days it’s just 2. I eat eggs bacon and maybe a steak. Coffee and water/electrolytes. Sometimes but not always I do 4-5 times but that’s probably just bacon. I’m loosing weight. I lost about 15 pounds in 1 month my energy was basically what it was like in college! That was when I was still trying to remove crap out of body.

you won’t get food poisoning, raw meat is our natural diet - raw beef from a store is fine - i would only make one suggestion - food poisoning comes from vaccines and dewormers which can be stored in the fat of animals so if you don’t know the source only eat the muscle meat not the fat, if you know that it is a natural animal without vaccines, etc then no problems with meat, fat, or organs

I would suggest he is eating too much protein. They suggest 1 to 2g of protein for every kilo of target body weight. Fat to protein ratio seems way off too. Typically there should be a 70/30 split of fat to protein.
