Filipino barbecue is everywhere in the Philippines, but it’s not just meat on sticks. Here are 4 Barbecue recipes that Erwan loves to make: Sisig, Pork Limepo, BBQ and Bangus.
Erwan is using the Masterbuilt Gravity Series 1050 Digital Charcoal Grill & Smoker available at www.ovendepot.ph/collections/...

Ingredients:
PORK BBQ
½ kg pork tenderloin, cut into 1 inch chunks
Marinade:
1 cup tomato ketchup
2 tbsp soy sauce
3 tbsp vinegar
¼ cup brown sugar
5 cloves garlic, chopped
1/2 cup lemon/lime soda (optional)
skewers soaked overnight
Vinegar Dip:
4 cups vinegar
2 pc red onion, chopped
4 cloves garlic, chopped
salt & pepper
1 cup sugar
2 pc bird’s eye chili
PORK LIEMPO INASAL
1 kg pork belly slices
Marinade:
3 cloves garlic, chopped
1 inch thumb ginger, sliced thinly
1 bundle lemongrass, white part only, chopped
¼ cup calamansi juice (around 10 pieces of calamansi)
¼ cup soy sauce
1 cup soda
soy sauce
chicken oil
PORK SISIG
½ pc pork mask/face, cleaned well and rubbed with rock salt
2 tbsp whole peppercorns
2 inch pc ginger, smashed
¼ cup vinegar
4 pc bay leaves
Finishing:
3 tbsp Sukang tuba
salt & pepper
1 inch pc ginger, sliced into sticks
1 pc red onion, chopped
GRILLED BANGUS
3 pc bangus, deboned and butterflied
salt & pepper
4 tbsp unsalted butter
3 tbsp crispy garlic

If you want more authentic Filipino flavor, do not use Heinz or other American ketchup, use banana ketchup. It adds sweetness to your marinate

Erwan, the Philippines does have its version of Sattay or Sate, its called Satti! Very abundant in Zamboanga. :)

content suggestion: make gourmet tinapa in that grill. it would be relatively easy since the temperature can be precisely controlled.

We’ve been grilling and smoking here in Florida It is awesome, and yes bangus is the best and yes also to pork tenderloin for bbq. Will make that dipping sauce for bbq sticks. Thanks for sharing hijo.

Who looked at Erwan's ear as he ate the ear? I would have loved to see Isaw on the grill. When I make Sisig, I grill chicken livers and then mash it as as ingredient for Sisig.

Love this episode, especially the simplicity of the sisig. I don’t like those versions with mayo. I have to check if that bbq is available in North America. I’m planning to purchase a Big Green Egg but I think Masterbuilt is technologically better.
