Adjust everything according to your taste i.e Quantity of oil, spices, vegetables etc
⭐Dum Aloo/ Laal Aloo/ khattay aloo⭐
⭐ دم آلو • کٹے آلو • لال آلو ⭐
Boiled Potatoes 1kg (cut any shape)
Oil half cup
Ginger garlic paste 1 tbsp
Haldi/tumeric half tsp
Half tbsp red chilli powder
Half tbsp red chilli flakes
1 tsp Salt/adjust
Half tsp sabit zeera/cumin seeds
Tomatoes 3 blended
Kari patta 7-10
Imli pulp 2 tbsp
Kasuri methi half tsp
In a pan, heat oil. Add ginger garlic paste. Saute for 2 mins.
Add haldi, red chilli flakes and powder, salt and zeera. Saute. Add kari patta
Add tomatoes and bhunofy. Add potatoes and cover the lid for 10-12 minutes. Add imli pulp and kasuri methi. Serve!♥️
⭐Dahi Baingan ⭐
⭐ دہی بینگن ⭐
Brinjal medium 3
Cut in your desired shape, soak them in water. Wdd 1 tbsp salt so they don't turn black.
Stir fry them in 1 - 2 tbsp oil. Give them a good colour.
Yogurt prep:
2 cups
Whisk it properly. Add 1 tsp roasted and crushed zeera/cumin dhaniya/whole corriander.
Masala preps:
In a pan heat 3 tbsp oil
Add 1 tbsp ginger garlic paste.
Now add:
Salt to taste
Haldi/turmeric half tsp
Red chilli powder and flakes 1 tsp
Roasted and crushed cumin and coriander tsp.
Cook the masala on low flame.
Add 3-4 tbsp of water so that the masala doesn't get burnt.
Assembling:
In a deep bowl, place brinjals, pour yogurt, add your masala.
Continue doing it (give layers)
Tarka prep:
Heat 1-2 tbsp oil
Add, half tsp cumin seeds
5-6 curry leaves/curry patta
2 button chilli whole (slit them)
1 green chilli (slit)
Pour this tarka over your dahi baingan bowl.
Enjoy with roti/naan or rice!
⭐Bhindi Masala⭐
⭐بھنڈی مصالحہ ⭐
Bhindu 1 kg
Half cup plus 2 tbsp oil
Onion sliced 2 (large size)
Ginger garlic paste 2 tbsp
Red chilli flakes and powder 1 tbsp
Haldi half tsp
Salt to taste
Tomatoes 2-3
Imli pulp 2 tbsp
Green chilli 5-7
Kasuri methi half tsp
⭐Karelay⭐
⭐ کریلے ⭐
1 kg karelay
(Peel and coat them with salt for 1-2 hours, wash and squeeze)
Oil half cup
Onions sliced 2
Tomatoes half kg (take raw and riped)
Ginger garlic paste 1 tbsp
Salt (keep it less)
Haldi half tsp
Red chilli flakes and powder 1 tbsp
Greenchilli 7-8
Kasuri methi half tsp
