My favourite is a vegetable soup my mother used to make, with onion, garlic, paprika, carrots, peas, celery, potatoes, dried porcini mushrooms parsley, and a simple pasta made of flour and water, cooked directly in the soup. Fantastic smell and taste.

wow!! sounds like an authentic minestrone super good. Apparently porcini mushrooms are the most nutritious on the planet. My childhood favorite soup is pasoulj, Serbian bean soup, which has a lot of paprika and peppers etc.; super spicy and including a lot of herbs, traditionally made with a lamb shank, I leave it out and no-one can tell the difference.

One of my most favourite(and unusual) foods to add to soup are dill pickles and pickle juice! I had it for the first time in a soup I tried in Serbia, and I was blown away!

Serbians are capable of anything! (my Dad was my hero). A lot of dishes in Serbia are the same as ones you will find in Turkey or Greece. What surprises people is the amount of home made sauerkraut that is eaten there as well so the pickle component doesn't surprise me; sounds fantastic.

My favourite soup is the sweet potatoe coconut and lime that you made recently on your channel... OMG! I've made it already twice and always do huge batches and eat it for days, served with some cayenne pepper, toasted pumpkin seeds and toasted bread (because bread+soup= LIFE)... yum!

for some reason coconut and coriander don't work for me so for the kind of soup you described, which sounds delicious, I bake sweet potato or winter squash and red bell pepper, some tomato paste and whatever else makes it delicious. Baby kale or flat leaf parsley is always going to be a last minute part, the rest of your ingredients, ditto, and lime or lemon to brighten things up. You obviously know what's happening. As for bread, it doesn't play a big part in my cooking but I like the texture of croutons and found that whole meal pumpernicle (where did I learn to spell) lightly toasted actually works fabulously if rubbed lightly with a bit of garlic. Just a variation on a great idea. Great comment!

I like chipotle peppers way better then cayenne. Cayenne is just boring, it adds heat without any real flavor. Peruvian peppers are also real nice.

Acid can replace adding more salt. Ever since Richard Landau said that in one of his cookbooks, I've utilized it, and it really works. Lemon, lime, a variety of vinegars, etc.

Favorite soup: white bean and kale and/or chard! Close second: pumpkin w/spiced pepitas! A fun soup topper that I like is popcorn. It goes well on almost any soup (I also use it in salads instead of croutons), but really tastes fab on pumpkin/butternut squash soups. Yummm

I am spreading the word about you guys; I have a few friends who are natural foodies like me and also vegan. I love the way you created the taxonomy of soup; it was great. I was taught to begin everything with a mirepoix unless making a gumbo where you substitute green bell pepper for the carrot; I think it's super important to begin with a pre-heated pan especially if you're not cooking with oil. I really like blended soups; but then there are those minestrone/gumbo chunky versions as well. I found this epic vegan Indian cookbook and just got addicted to garam masala flavoured carrot/red lentil soup and have been experimenting with it every since. My favorite mistake (favorite guy I lived with) took an hour to cook anything --- I include scrambled eggs -- I will always love him and he is my best friend but cooking does not have to take an inordinate amount of time as you guys make so manifestly clear. He was Irish too so laugh and have great memories. Keep up the good work!!!!! Cheers! The only thing I am not crazy about is coconut milk; I soak almonds or walnuts or use tahini and it works for me. Tx you guys!!!

Brilliant. Just brilliant, guys. Thanks for clarifying the basics: which might be "basic", but can sometime be bleeping confusing, and if one screws one up, can make the soup one of those ones going down the drain... That said, two points: Chunky soup: I would love, love, love, love, love, love, love, love, love, love, love for you awesome twosome to come up with a great vegan and gluten free chunky soup (minestrone style fine, just not cheating with gluten free pasta! I want a chunky, chunky soup/stew!) Dave said "sloup". Sloup. I loved you before, Dave, but now you're adopted family. My family has used "sloup" to always herald the beginning of soup season, using that as the subject line of any new soup recipes we've found. It's great to see we're not the only ones! Fantastic video dudes! Love the tips. I’m going to try your formula with extra large Lima beans. In a soup they get really creamy. My favorite though is to make a vegetable soup with cassava root or yuca as it’s sometimes called. It’s very delicious and creamy in a soup and makes it very hearty. I’m able to purchase it peeled and frozen. We also eat it boiled and then add warm garlic and olive oil and then top with parsley. It’s delicious. Are you able to find yuca in Ireland? 😊

I love soup in general. Difficult to say which is favourite because I love so many. One of my winter staples is soup made of tomatoes, savoy cabbage, carrots, potatoes and red lentils seasoned with cumin. Yum. Currently experimenting with miso soup, got two kinds of miso and making different versions. :-)

No traditional sauté and roux? I love soup, and make it all the time breaking all of these rules. I like it EXTRA chunky, Mexican style. If there is a whole corncob in there, it makes you feel like you won first prize. :D I think what is great about soup is really there are no rules, just cultural ideals. Here in Germany soup is almost always creamy, in Asia they tend to be runny, and in France they are almost always blended, in Spain they are usually acidic, and in the states they are thick and chunky... As long as they're vegan and no one forgot the pepper, I am in!
