The stew should have toasted bread in the bowl to really make a fantastic meal The tuna garbanzo salad reminded me of my neighbors in my childhood they were Sephardic Jews with Spanish and Greek roots. My mom was from Italy and they shared recipes. We were pretty poor but we ate very very well.

My mom tried to teach my sister and I to just fry the potatoes in olive oil, but we kept messing it up, so she taught us to boil the potatoes first. lol. We always make this dish for family gatherings. If we don't make it all HECK breaks loose. People pout through the entire party! We make about 4. We started getting creative adding cheese or chorizo, sometimes onions and mushrooms. The chickpea and spinach stew is my favorite when I'm low on cash. Deliciosos!

As someone who lived dirt poor on ramen and became a home cook, I recommend having a side of rice or noodles for the fifth recipe to make it stretch a bit. Veggie stews last a bit longer than protein based ones, so they keep longer in the fridge if you need to. If using seasoned tuna for the salad, use the can and cut back on the olive oil (I tend to go all the way because yum!).

Everyone has a favourite Mediterranean cuisine. Mine is Spanish, largely because if the smoked paprika. It's one of my favourite seasonings ever; I have even topped off mashed potatoes with it. These dishes aren't just cheap, they're nourishing and delicious

Tortilla! I lived in Morocco so we had a lot to do with Spanish food and ingredients. When I was hungry in the evening time my husband or ex-husband would make one of these and we ate it with sauce to modish and flatbread as a fork. I even got so I made a really great tortilla however I haven't made any Moroccan food since I left a number of years ago. It feels painful still. I have no family in America they've all passed away and no close friends but in Morocco I had a huge family a huge loving family! :-)

Hi! Love your recipes. I´ve lived in Madrid for 35 years and it amazes me that you add black pepper to everything. Is that something from Castellón because here you have to beg for pepper in a restaurant and then they give you white pepper which is very bland. Curious to know if that´s your own touch or something regional.

Hiya, That's another great selection of gorgeous recipe's that are definitely going to be cooked by me many times. They are particularly good for me as I am having problems with my Gall bladder and have to stop eating saturated fat and buttery pastry, etc, but a lot of your fab recipe's are perfect. Great video Albert. I imagine it’s traditional for most of these dishes to have a green salad served alongside them, not something most students are going to do tbh😂 As a long-since-passed-student-age single gent cooking for himself though, these are equally as valuable to us older types. I usually kick these up to one-pot meals by adding some chopped cilantro and chopped baby spinach to the potato omelette, fresh rocket drizzled with a little olive oil alongside the tomatoes with the cheese omelette, and some chopped baby spinach with the chick pea and tuna salad. Can’t get enough foliates for those natural sources of vitamin B!

Te recomiendo que, primero, eches un buen chorro de aceite en una sartén y cuando esté caliente, eches las patatas. Después, cuando se vayan ablandando, las vas partiendo/machacando. Y ahora sí, las sacas de la sartén, escurres el aceite y tras un rato, lo mezclas con el huevo y lo echas a la sartén.

Spanish tuna may be cheap in Spain, but here where I live in the US it's $5.49 for a 3.95 ounce can. I can buy a 5 ounce can of non-Spanish tuna fish for 68 cents. College students on a budget don't buy $5.49 small cans of tuna fish. They pay 68 cents for a can of tuna. I'm glad you didn't use your regular cheese, which seems to be manchego cheese, because that stuff is only found in the gourmet cheese section in tiny packs and costs over $1 an ounce which wouldn't be on a college student's budget either. College students on a budget would be using American Cheese which legally doesn't even qualify as cheese. If you were ever a college student on a budget, it was a much higher budget than mine. Sea salt? Freshly cracked black pepper? Bottles of gourmet extra-virgin olive oil? How about mustard sandwiches? Or peanut butter and jelly? Packs and packs of ramen noodles? Bowls of store brand cereal? Here's a challenge for you --- make a meal that matches the cost of ramen. That's 19 cents for a pack that's supposed to be two servings. (Though, realistically, people eat the whole pack.) And don't think you can take the cost of a bottle of gourmet EVOO and divide by the amount...not when the student would have to go out and pay for the whole bottle because they don't let you buy just a couple of tablespoons. As part of that challenge -- should you choose to accept it -- if you want to check how much the food costs in the US, use www.walmart.com/grocery and just enter some US postal code to get the prices for that area.
