As a Spanish chef... Well done. I see in some comments people saying that... the Spanish tortilla never goes to the oven (false, sometimes the Spanish tortilla goes in the oven, a hundred years ago it was easier to do it in the oven) And those potatoes need more olive oil!!! There are a lot of recipes of chorizo with honey and some kind of wine, cider or others, so... well done with that to. Thanks a lot for this video of Spanish tapas

most comments are because he cooked the tortilla in the oven which makes it a frittata, an italian dish. Donald's version could be the addition of veggies,including the rosemary in the almonds or whatever you want. Different ways of cooking produce different dishes. I'm sure that wherever you live there is a "famous" dish and it would be another different thing if you cooked it in a different way.

Good point, but sorry, not exactly... The Castillian Spanish pronunciation is "tcho-ree-tho". Not "tz" (totally made up by English speakers), not "ss" (South of Spain and America), but "TH" as in 'thought'.

It's not a "point" - I know Spanish:) The point was actually - not to say "sh" in the beginning and "tz" in the end. Both are not correct. Regarding the correct ways - there are many, you know. South of America is quite big, in Mexico they say "ss".

This is a strange mixture of Italian (the frittata) and Middle Eastern (chickpeas, almonds, honey) food, cooked very differently from how we would normally cook in Spain. But it looks delicious and easy to make. Yum!!! Essential tips for real cocina española: More olive oil, less garlic/spices, good ingredients and keep it simple. Thanks for everything, Donal!

Just a few tips on the tortilla: let the potatos stay longer with the egg mixture, it should be a little dense when youput it on the pan. Also, instead of putting the tortilla in the oven, grab a plate, flip it in it and then put it down on the pan on the side not done. It's a bit messy but the result is wonderful :)

I'm not really sure who/where did you get this as 'typical tapas' from Spain, but here are a few tips from a group of fans of your videos: + Great pick of flavours! and of course the cheese and Serrano/Pata negra are really good picks and almost a MUST when preparing Tapas + The Chorizo with chickpeas is not that typical at least as tapas in most of Spain, I'd have gone with a 'Chorizo a la sidra' instead. Don't use honey and use cider instead of wine and let it reduce in the same way to get a 'Chorizo a la sidra' (typical all over the North of Spain) + The Almonds with smoked paprika are not that common in the whole Spain, but some people do have them as typical from their region. + Sorry but the Tortilla de patata is simply wrong, you prepared a Frittata (which is nice, but not a tortilla): Fry the potatos and onion slices with more oil, and take them out of the oil when they start browning. Let them rest a bit while you whisk the eggs (the paprika is not that common, although is allowed... people usually use a green paprika). After whisking the eggs, add a bit of salt and pepper, add the potatos/onion, give it a stir and let it rest for 15 minutes so the flavors mix completely in there. In middle-high fire put a pan with some oil... add the mixture and stir it just a bit so the tortilla "starts" coming together. When you feel comfortable with the consistency, turn around the tortilla with the help of a plate (careful) and let it finish in low fire for a few minutes (if you want a perfect tortilla and your eggs are new, you should aim for a point in which the inside part is still a little creamy and not really cooked). I hope it helps a bit :D nice video though!

I am aware of that. However, what I'm trying to say is that in every spanish household I've been to (including my own) I always saw that a tortilla was flipped and I have never seen the cheaty method for a spanish tortilla in Spain. I was always tought what I mentioned in my initial comment. The only time I have seen the "cheaty method" was when people were cooking an italian frittata.

Although I usually love your videos, as a Spanish, I have to say that your recipe for tortilla is not at all like the real one. It is true that there is a different way to make tortilla in each house but it is more about the time of cooking or if you want to add onion or something else, but the steps of making it are always the same and you changed them, both in the potato making as in the tortilla itself. BTW, is chorizo and it looked pretty good.

Isma, iberian chorizo is a spanish saucesse, the spanish tortilla is most versátile, is with spinach , manchego, pepper, etc. That is not frittata, is a spanish tortilla with iberian chorizo, is a symbol to spanish cuisine.

your "tapas" seems delicious (in fact I'm from Spain and I've never seen the recipes you made but they seem cool eany way). Just a thing: we never coock tortilla in the oven. NEVER. This is like a kind of sin you've made. We allways cook spanish omelete in the pan. And, just another little detail: we use to cut the potatoes in cubes, not in the way you do. And, to be honest, you could have choose other tapas more representatives of our culture as 'ensaladilla rusa', 'gazpacho', 'croquetas', eany kind of 'pinxos' or things like that. Your recipes really sounds delicious, but I'm not sure if they are really typical of my country.

This recepies might be a bit spanish inspired but i dont think any spanish bar would to serve you honey with chorizo , or a baked tortilla . And the pata negra is a kind of pig which ham is very well known thats why the word ham is usually , but apparently you are using the lomo embuchado (pork loin )and not the ham and you are refering to it with the name of the animal so i found it quite confuse .

I think OrieuQ14 is being educational. it's a fact, loin and ham are different things; Pata negra refers to the quality, it is not used to name them. And that is not a spanish tortilla in any way, that was a frittata, which is italian. Frittatas are delicious as well, but they aren't Tortillas; are made by a different process
