I really appreciate how you explain what certain ingredients are doing in the dish/their purpose/function for being added and such. It’s subtle, but teaches us not as knowledgeable still-learning home cooks _WHY_ we’re doing what were doing with specific foods, so that we can carry that knowledge on to other dishes. Especially with vegan cooking, there are a lot of things to learn. I’m still confused though about what red wine or alcohol in general does in dishes, and why dark chocolate would go into chili! Hahha.

I just made my first ever vegetarian Shepherd’s pie (not this recipe though, but it wasn’t that different tbh, however my peas went _IN_ my pie, not on the side, and I added parsnips with my diced carrots... also I can’t go without my cheddar cheese shredded in and on top of my mashed potatoes!) - I was floored with how dang good it came out. Such a yummy comfort food indeed! I also discovered a new spice that I like that I’ve never tried before, which worked super well in the veggie mince and lentil mix portion of my pie. My local food pantry hooked me up with fresh rosemary and marjoram. I’ve never had marjoram before (knowingly at least - perhaps a restaurant has used it on my food before and I’d never know it). It is just fabulous in Shepherd’s pie! I totally recommend it! I used the rosemary too with it of course, and also used thyme (and salt and pepper obviously). The marjoram really gave it a great fIavor! :)

I made the chilli today. Absolutely Delish! Actually tastes better than meat version. I didn't have any wine so replaced it with a stock cube. Well done guys 👍

I use soy mince in my chilli, all the Mediterranean veg (courgette, aubergine, mushrooms, peppers, onions), plus lime juice and BBQ sauce., as well as most of the ingredients you've used :-)

Tried the shepherds pie tonight 😍 it was great but I wasn’t sure on the quantities so I think I used too much stock. Highly recommend though!

What in the hell is cavolo nero?! Never heard of it. Is it a fancy name for spinach or something that I probably already know? For instance, you called green lentils “puy lentils,” which I’d also never heard of. I doubt our grocery store carries anything called “cavolo nero,” tbh. Never seen that name in my life here in the States. Edit: Ok I stopped being lazy and looked it up. You goofs. Lol. You couldn’t have just called it “kale,” could you have? I hate kale. Looks like a great stew without ruining it with kale. :P
