I've listed what I've made by eye, so when you make it, please prepare it while tasting it.
[Goya (bitter melon) with Gochujang]
1 bitter melon
2g Katsuobushi (dried bonito flakes)
1 tsp Gochujang
1 tsp sugar
1/2 tbsp rice vinegar
1 tbsp soy sauce
A little sesame oil
[Pork miso soup with eggplant and okra]
150g thinly sliced pork
1 eggplant
1 green pepper
2 okra
600ml Dashi stock
2-3 tbsp Miso
[Shishito pepper and Hijiki seaweed furikake]
10 shishito pepper
30g dried small sardine
5g dried Hijiki seaweed
1/2 tbsp sugar
1 tbsp soy sauce
1 Umeboshi (Japanese salty plum)
[Dashimaki egg with cherry tomatoes]
8 cherry tomato
3 egg
A little salt
A little granulated Dashi soup stock
[Winter melon udon]
2 servings Udon
400ml Udon soup (please use your favorite Japanese noodle soup base for example Mentsuyu)
*Winter melon filling
1/2 small winter melon
150g ground chicken
12 shrimp
500ml water
1 tbsp chicken stock (granulated)
1/2 tbsp sugar
1 tbsp soy sauce
A little salt
1 and 1/2 tbsp potato starch (mix with 3 tbsp water)
[Deep-fried whole green peppers]
5 green pepper
5 tbsp sake
3 tbsp mirin
1/2 tbsp sugar
2 tbsp vinegar
3 tbsp soy sauce
2 chili pepper
[String cheese and Surimi (crab sticks) tempura]
2 string cheese stick
10 Surimi (crab sticks)
15 shiso (perilla) leaves
70g tempura flour (A 1:1 mixture of flour and potato starch is also OK.
100ml water
[Pickled Ogodai (Lavender jobfish) in spicy Japanese sauce]
1/2 Ogodai (Lavender jobfish)
2 green chili pepper
*Sauce
50ml Sake
50ml Mirin
100ml soy sauce
1 tbsp sugar
[Shrimp and cheese with edamame]
100g edamame
12 shrimp
4 cheese
1 tbsp white miso
[Chinese-style dried winter melon and cucumber salad]
1/2 dried winter melon (small)
1 cucumber
1 tsp sesame
1 tsp chicken stock powder
2 tsp rice vinegar
2 tsp soy sauce
A little sesame oil
[Stir-fried water spinach with salted kelp]
1 bunch water spinach
1 clove garlic
1 chili pepper
1 pinch salted kelp
A little salt
