My confusion with Waves plugins is, for example, the Abbey Road Saturator, do you use the mono oe stereo version🤦‍♂ I been using the mono H Deley plugin all this time because the vocal is in mono but I this video he is using the stereo version.

That depends on what you want the output of your track to be. Usually if you want your vocals to be stereo you use a mono to stereo version.
