My ricotta pancakes calls for separating the eggs and beating the egg whites to stiff peaks and then folding the whites into the pancake batter. This does really make for light batter.

It's hard to pick one summer breakfast from the choices you have created and shared with us. Quesadilla would definitely be on a list of need- to-try! However, lemon ricotta pancakes sound incredible, Caprese quiche- YUM and zucchini Galette strikes my fancy! I've never heard of a Dutch-Baby, yet I believe the children would really enjoy your strawberry-lemon version!! As usual thanks for sharing. Could I freeze the galette crust in a disc like a pie crust? I tried this recipe a few nights ago and absolutely loved it! My husband said it was amazing! Definitely going to become a go to recipe for this summer's zucchini harvest!
